When you drink a cup of coffee, what are your impressions? Bitter, acidic? Smooth, mellow? Beyond the enjoyment of taste, a cup of coffee carries with it the stories of its origin, cultivation methods, and producers—stories that await our careful appreciation.
Mexico's Emerging Coffee Scene
Mexico, this exotic land with its deserts, blue waters, mountains, vast cities, and small villages, has seen growing interest from coffee buyers in recent years due to increasing demand for high-quality coffee. This has helped elevate Mexico's status from its previous role as a source of blended coffee to a producer of single-origin and organic specialty products.
The Chiapas Coffee Region
Chiapas is an important premium coffee-producing region in Mexico, where most high-grade beans are cultivated in high-altitude areas. Many high-altitude organic Mexican coffee beans are grown by indigenous communities. These indigenous people have organized numerous cooperatives to obtain assistance from international organizations, secure better prices, promote advances in coffee cultivation techniques, and adopt organic farming methods for coffee production.
The CESMACH Cooperative
CESMACH stands for Campesinos Ecológicos de la Sierra Madre de Chiapas (Ecological Farmers of the Chiapas Sierra Madre) in Spanish. The cooperative was established in 1994 and is located in Mexico's ecologically rich El Triunfo region. To avoid damaging the natural ecosystem, coffee farmers adapt to the local environment by using organic cultivation methods, growing coffee under the shade of mist forests. Although such environmental conditions limit the coffee cultivation area, the decaying leaves under the trees provide fertilizer nutrients for the coffee plants, while the diverse bird species in the ecological area help control coffee tree pests.
The CESMACH cooperative uses community development funds provided by fair trade to build warehouses, offering sufficient space and equipment for coffee storage and packaging operations, thereby improving quality and reducing costs.
Women's Empowerment Initiatives
Beyond being environmentally friendly, the CESMACH cooperative is also committed to women's empowerment. Locally, many women must take on the responsibility of caring for their entire families as their husbands often need to move to other regions for work, frequently facing challenges of insufficient income and food scarcity.
The CESMACH cooperative is a member of the Café Femenino Foundation. Café Femenino has long focused on women in coffee-producing regions worldwide, providing diverse income streams and fostering female leadership and cooperative management, hoping to change the situation of women facing unfairness and long-term neglect, developing their confidence and independence.

Brewing Recommendations
FrontStreet Coffee recommends brewing with water around 90°C. This coffee offers chocolate and almond flavors with a mild, delicate, sweet taste and elegant aroma. The balance between acidity and bitterness is excellent, and the extracted coffee shows varied flavor layers at both high and low temperatures. Various roast levels are worth trying, and the acidity at light roast is also outstanding. When deep roasted, it also exhibits excellent flavors, with moderate body and smoothness that is refreshing, with a long-lasting aroma.
