Ethiopia Single Estate Project | What are the Flavors of Natural Process G1 from Local Heirloom Varieties at Bitta Farm in Kaffa Forest Region?
Originating from the most primitive Kaffa wild jungle in Ethiopia, the coffee trees planted in this jungle are part of the wild forest ecosystem. They grow naturally under the protection of rainforest trees, where fallen branches and leaves serve as the best natural organic fertilizer. Many believe that Ethiopia is the birthplace of coffee because the first coffee tree was discovered in ancient "Abyssinia," which is present-day Ethiopia. The region where these trees flower is called "Kaffa," and the trees are called "Kafa"—this might be the most original pronunciation of coffee.
Ethiopia Single Estate Project
For many years, the vast majority of Ethiopia's coffee has been purchased through the E.C.X trading system for green beans. The Single Estate Project aims to establish closer connections with origins through direct trading with estate owners, while also ensuring that farmers who cultivate high-quality coffee receive corresponding rewards. Additionally, estate information can provide consumers with more precise relevant data.
Ethiopia Kaffa Forest Bitta Farm
Bitta Farm is located in the Kaffa Forest region of southwestern Ethiopia. To this day, the Kaffa Forest maintains the appearance of traditional Ethiopian primeval forest, preserving quite a number of native coffee varieties. Many cuppers who have cupped coffees from the Kaffa region agree that this area exhibits quite diverse flavor profiles. In early 2016, the Shoucheng Coffee team traveled to Ethiopia to discuss refined natural process coffee handling directly with the owner of Bitta Farm, while confirming that the estate has the relevant conditions and processes for handling refined natural process. Bitta Farm strictly selects the most suitable coffee cherries for natural processing, while the estate owner provides relevant training to coffee cherry harvesters and increases wages to reward workers for harvesting the best coffee cherries. At the same time, African raised bed drying is used for natural processing, providing better ventilation to maintain the cleanliness of natural process coffee.

■ Dripper: Hario V60
■ Water Temperature: 90°C
■ Grind Size: Fuji Royal grinder setting 3.5
■ Brewing Method: Water-to-coffee ratio 1:15, 15g coffee grounds. First pour 25g water, let bloom for 25s. Second pour to 120g, then stop pouring. Wait until the water level in the coffee bed drops to halfway, then continue pouring slowly until reaching 225g. Extraction time around 2:00.
Analysis: Using a three-stage brewing method to clearly distinguish the flavors in the front, middle, and back end of the coffee. Because the V60 has many ribs and drains quickly, stopping the pour can extend the extraction time.
