Flavor Description: The dry aroma features chocolate, caramel, plum, and almond notes. The cup reveals milk candy, caramel, citrus, plum, pomelo, preserved plum, dark berries, blackberry, and mulberry flavors, with a caramel-chocolate finish. The overall flavor profile is solid and full-bodied, making this a distinctive coffee.

This batch of beans comes from the Planadas Farmers Association in Tolima Province - Asociación de Productores Ecológicos de Planadas (ASOPEP), established in 2013, composed of 162 small farmers, each cultivating less than three hectares. They use traditional washed processing, fermenting in water tanks for 16-18 hours, then washing away the mucilage layer and drying in the sun. The association practices organic farming to protect the ecological environment and creates more stable income for small farmers in this region through fair trade.

Colombia is divided into 32 provinces, with Tolima Province (Department of Tolima) located in the southwest, adjacent to the renowned specialty coffee producing regions of Huila and Cauca. The provincial capital is Ibague.

Within Tolima Province, the Andes Mountains (M. Andes) and Cordillera Mountains (M. Cordillera) run north-south, and between these two famous mountain ranges flows the Magdalena River (R. Magdalena) from south to north.

The name Tolima comes from the earliest inhabitants of this area, the "Pijao people." In the language of this ancient group (Pijao word), tolima means "snow-covered." From this, it's not difficult to imagine that this distant land would also be home to high-quality coffee.

Tolima borders Huila and Cauca, a region that coffee pilgrims need to决心 to visit. The road conditions here are not ideal, and some experts who have visited Tolima have all described the bumpy hardships during their travels.

Farms in Tolima are generally slightly larger than those in other southern Colombian coffee regions, averaging between 10-15 hectares. Cooperative models are also popular here, with farmers sending their small batches of fresh coffee cherries to cooperative processing plants. Some farmers also choose to process their own coffee, using small-scale facilities that can handle the daily harvest volume. Carefully processed green beans can be priced based on cupping results, with a few outstanding batches designated as "microlots" and stored separately for further cupping in the capital Bogotá. The remaining green beans are typically blended and sold based on cupping flavors.

Like other Colombian regions, the classic processing method here is also washed processing, using sun-drying.
