Colombia's Coffee Regions
Colombia's main producing regions include Huila (San Augustin), Narino, Tolima, Popayan (Cauca), Valle de Cauca, Meta, Antioquia (Medellin), Magdelena (Sierra Nevada), Boyaca, and Santander (Bucaramanga). Narino Province is located in southwestern Colombia, entirely within the country's highest elevation area. The provincial capital, San Juan de Pasto, borders Ecuador and faces the Pacific Ocean.
Coffee cultivation is an extremely important economic pillar for Narino Province. Traditionally, coffee small farmers in Narino Province cultivate areas of less than one hectare. Most coffee-growing areas within this province belong to the high mountain terrain of the Andes, with remote mountainous areas and steep mountain slopes, influenced by Pacific Ocean winds.
Narino Province is also one of Colombia's important coffee-producing regions. Although its cultivation area is the smallest among the 14 major producing regions, the entire province possesses special natural environmental conditions of circular valley microclimate, thus producing the best quality coffee. Since ancient times, it has enjoyed the beautiful reputation of "the Pope's Holy Grail."

In addition to the country name (Colombia), producing region (Narino), and farm name (El Limo), the farm owner's name (Alirio Gomez) is also included. Moreover, because the farm owner grew up in Narino Province near Buesaco, the coffee name also features Buesaco.
As a micro-lot small farmer, Alirio Gomez, after harvesting coffee cherries between May-July and November-December each year, carefully processes the harvested coffee fruits through his own micro mill, and performs subsequent raw bean processing operations including depulping, fermentation, and drying.
The flavor profile includes floral notes, vanilla cream, roasted nuts, and citrus sweetness, with dark fruit tones, balanced acidity, and a delicate, juicy mouthfeel.
Bean Characteristics
The beans are relatively large, reaching the 16-18 screen SUPREMO standard. Colombia's geographical location at the boundary between the northern and southern hemispheres allows most farms to achieve two coffee harvests per year. The more southern Narino region, however, yields only one harvest per year, resulting in lower production compared to other Colombian beans. But the strong honey, chocolate, and caramel aromas, combined with comfortable sweetness, are also what most people remember about Narino region coffee.

Brewing Method: Water-to-coffee ratio 1:15, using 15g of coffee grounds. First infusion with 25g of water for a 25-second bloom. Second infusion up to 120g, then pause. Wait until the water level in the coffee bed drops to halfway before continuing infusion. Slowly pour water until reaching 225g total. Extraction time approximately 2:00.
Analysis: Using a three-stage brewing method to clearly define the front, middle, and back-end flavors of the coffee. Because the V60 has many ribs and faster drainage speed, pausing the water flow can help extend the extraction time.
