Coffee Beans: Seeds of the Coffee Cherry
Coffee beans are the seeds of coffee fruits, which are also known as coffee cherries. When the outer skin and pulp of the coffee fruit are removed, you get two coffee seeds, which are raw coffee beans. Since coffee fruits harvested at maturity are prone to spoilage, they must be processed promptly to facilitate storage and transportation.
Washed Processing Method
Remove pulp and pectin → Sun dry
The washed processing method, also known as the washed fermentation method, is currently one of the more popular processing methods, with the following steps:
- After harvesting the fruits, coffee farmers place them in water tanks to remove debris and unripe beans;
- The coffee fruits are placed in a pulping machine to remove the pulp and skin, obtaining pulped raw beans;
- The pulped raw beans are placed in fermentation tanks to decompose the pectin remaining on the endocarp, obtaining raw beans with residual pectin;
- The raw beans with residual pectin are placed in washing pools to remove the pectin, obtaining raw beans with endocarp;
- The raw beans with endocarp are placed in sun drying fields or dryers for sun drying treatment;
- Finally, the dried raw beans have their endocarp removed using a hulling machine.
Advantages and Disadvantages
Advantages: Washed processed coffee beans, because defective beans are removed through repeated screening, result in higher quality raw beans with uniform appearance, and you'll experience extremely high cleanliness in taste.
Disadvantages: They tend to easily absorb fermented odors, while having a relatively simple layer complexity.
In simple terms, the washed method involves soaking harvested fruits in water tanks for two to four hours to soften the pulp, using a pulping machine to remove the pulp, then soaking the seeds in water for another two to four hours to allow residual pulp to ferment and fall off completely, resulting in clean seeds. This is coarse coffee, which is then dried by sunlight or artificial means. Using machines or manual labor to remove the silver skin and parchment layer yields the coffee beans for brewing.
