Lake Toba is located in the Dapato Highlands of northern Sumatra, Indonesia. It is Indonesia's largest freshwater lake and a world-renowned plateau lake and famous tourist destination. Lake Toba was formed by faulting, with a maximum depth of 529 meters. The lake is diamond-shaped (coordinates: northwest corner, southeast corner), 100 kilometers long, 30 kilometers wide, with an area of 1,130 square kilometers. It is the world's largest and deepest volcanic lake, with a maximum depth of 505 meters and an elevation of 905 meters. North Sumatra province coffee is grown around Lake Toba. This lake area is extremely large, being the world's largest lake formed by volcanic activity. The famous production area is the Lintong production area south of Lake Toba. Lintong is a small town near Lake Toba, while Lake Toba is the world's largest volcanic lake with a vast hinterland. Therefore, there is a significant quality difference in coffee from the north to the east. This particular coffee is the highest grade Mandheling from the Lintong production area.
Indonesian coffee quality is very diverse, with most of it marketed by island source: such as Sumatra, Sulawesi, Java, or Timur. The advantage of Indonesian coffee is that most coffee varieties have rich, reserved flavors and lively moderate acidity. Chinese people hold Indonesian Mandheling coffee in extremely high regard, making it one of the most accepted single-origin coffee products. Indonesian Mandheling was once praised as the world's finest unique wet-hulled coffee beans. Mandheling is a trademark product. Today, as long as coffee cherries harvested in Indonesia undergo this unique wet-hulling processing method, the resulting green coffee beans are sold under the Mandheling coffee bean name. Mandheling originated from coffee planted by the Mandailing people in the Tapanuli region of northwestern Sumatra. At the end of World War II, a Japanese soldier introduced it to the Japanese market. Due to pronunciation misguidance, Mandailing incorrectly became Mandheling coffee.
Sumatra Island: Sumatra's coffee is very complex and elusive. The best coffee in Sumatra comes from two places: the Aceh province in northern Sumatra near Lake Tawar and the mountains surrounding Toba Lake in the more southern region. Due to many small tenant farmers as producers and their unique semi-washed processing method and soil iron deficiency, at the fresh green bean stage, coffee beans from this area will have a special blue color. Sumatra Island is Indonesia's second-largest island and the world's sixth-largest island, with a vast area of 470,000 square kilometers, thirteen times the size of Taiwan. It is divided into eight provinces, but only two provinces extensively grow coffee—Aceh Province and North Sumatra Province. The most representative coffee production areas in these two provinces are the Gayo Mountains around Lake Tawar in Aceh Province, planted by the local indigenous Gayo people, featuring a unique culture dominated by female cultivation and harvesting.
Lintong Province Blue Lake Batak is a famous volcanic lake less than two hours' drive from Medan, the largest city in North Sumatra Island. It is the world's largest volcanic lake with a vast hinterland. Therefore, the characteristic style of coffee from the north to the east varies greatly. This particular Blue Batak is the highest grade Mandheling from the Lintong production area. Currently, the Batak people, not the Mandailing people, grow coffee in the mountainous areas near Lake Toba. The name "Blue" comes from the slightly blue-green appearance of its green beans and the clear azure color of the lake surface, hence it's called Blue Lake (Blue Batak) Mandheling or Blue-Eyed Mandheling. Under this semi-wet, semi-dry wet-hulling processing method, coffee farmers use machines to remove the skin and pulp of red cherries. The coffee beans still have much mucilage, then they are stored in fermentation tanks for stirring and fermentation for about one day (24 hours). When fermentation is complete, the attached mucilage can be easily washed away with water. Then sun-drying reaches about 30% to 35% moisture content, the coffee bean husk is removed, and it can be taken to market for sale. Removing the coffee bean husk in this semi-wet, semi-dry state reveals a unique deep blue color of the beans themselves. This processing method reduces acidity and increases the coffee's body, achieving this distinctive Indonesian-style coffee.
Flavor Characteristics:
Sweet herbs, cinnamon-type spices, orange-citrus peel aromas, rich and thick sweet sensation, creamy walnut chocolate. The fruit acidity is reserved and gentle, with rich melon aroma in the fragrance. As temperature decreases, herbal notes emerge, with light spices. The herbal aroma is thick with a rich sweet sensation, grassy sweetness, with slight lemon peel fragrance. The flavor is clean, balanced, and refreshing, with milk chocolate orange citrus that is round and smooth, with a sweet and lasting aftertaste.

Grind Size: Small Fuji grinder setting 4
Brewing Method: Water-to-coffee ratio 1:14, 17g coffee grounds. First pour 25g water, steam for 30s. Second pour to 238g water, extraction time about 2:30 minutes.
Analysis:
The KONO dripper doesn't have many ribs at the bottom, and the filter paper fits closely against the dripper, achieving the purpose of restricting airflow. This allows water and coffee grounds to have longer contact and soaking time in the dripper, ensuring extraction time and extraction rate for coarse grinding. This allows the coffee grounds to be fully extracted, enhancing the thick mouthfeel and making the flavor more concentrated.
Flavor:
High balance, clean, thick and solid mouthfeel, with a lasting dark chocolate aftertaste.
