Introduction to Yemen Mocha Coffee

The name of Yemen Mocha coffee comes from Mocha Port, the outer port of Yemen's capital Sana'a. The highest quality among Mocha coffees is Yemen Mattari coffee, grown in the Bani Mattar region. Mattari is Yemen's most renowned and highest-altitude coffee-growing region. Yemen produces Arabica coffee beans, which are generally smaller than typical coffee beans, appearing quite different from other larger coffee beans. Despite their small size, they possess distinct characteristics, especially the prominent fruity aroma that other coffee origins cannot imitate. With its unique fragrance, fruit acidity, appropriate bitterness, excellent balance, and rich personality, it has a deep following among coffee enthusiasts and has been highly sought after. Therefore, it is often compared to red wine among coffees.

I. Overview

1. Yemen is a country with relatively high temperatures, especially the western coast near the Red Sea, which is hot and dry. The regions suitable for coffee cultivation are in the western Yemeni mountainous areas, where the terrain is rugged and the altitude is above 900 meters.

2. Coffee farms are concentrated at altitudes between approximately 900 and 2000 meters.

II. Coffee Bean Processing

Yemen's dry climate causes coffee cherries to become very dry and hard even before being harvested, so the dry method is used to remove the fruit skin and pulp. Yemen's coffee has homemade tools used to remove the dried fruit flesh from the coffee, followed by manual sorting to select clean, healthy coffee beans.

III. Roasting

Yemen Mocha coffee is a very mature coffee bean, so during roasting, it requires more time and deeper roasting than typical Arabica coffee. Because Mocha coffee is processed using very natural dry methods, the roasted Mocha coffee beans have uneven colors. Even when roasted simultaneously, there will be noticeable color differences between individual beans.

The flavor of Yemen Mocha coffee fully develops two days after roasting. The taste is also better when roasted Mocha beans are left for 24-48 hours before grinding.

IV. Varieties

Mattari is mainly grown in the Bani Mattar region west of Yemen's capital and is the most outstanding variety among Yemen Mocha coffees. It is aromatic and mellow, with strong acidity and hard beans.

Harazi is produced on Yemen's second highest mountain range between the capital Sana'a and the coast. The coffee's wine-like and acidic flavors are very prominent, but its body is slightly lower than Mattari coffee.

Dhamari comes from the Dhamar region south of the capital, with relatively mild and light flavors and moderate acidity.

Sanani has the most complex composition, usually blended from coffee beans produced in many areas around the capital. The coffee's flavor is milder than Mattari and not as heavy.

V. Brewing

Due to its distinct and rich flavor, Yemen Mocha coffee is an excellent material for making blended coffee.

Italian espresso often includes 10%-20% Mocha coffee to increase the body and aroma.

Hand Brew Parameter Recommendations:

1. Filter: V60

2. Water temperature: 88°C

3. Grind size: Fuji Rokou grind level 4

4. Roast level: Medium roast

5. Bloom time: 25 seconds

Flavor: Balanced, chocolate notes, persistent caramel sweetness in the aftertaste
