Understanding Ninety Plus Flavor Designations
It's essential to recognize Ninety Plus's unique flavor designations:
W2 = Washed processing flavor profile
N2 = Natural processing flavor profile
H2 = Honey processing flavor profile
It's important to emphasize that generally, in coffee terminology, W represents washed processing, N represents natural processing, and H represents honey processing.
However, for Ninety Plus, W, N, and H do not refer to processing methods but rather to flavor descriptions.
W2 indicates a bean with flavors similar to washed processing, but it doesn't necessarily mean it was processed using the washed method. As for the number 2, it has no particular significance.
The SK processing method (Solar Kiln) is specifically marked because SK is an innovative processing method created by Ninety Plus, with a clear targeted application, hence the special designation.
Ninety Plus's Unique 100-Point Grading System
Ninety Plus's beans also feature a distinctive 100-point grading system. This is mainly because all beans produced by Ninety Plus should score above 90 points in cupping tests. Their grading levels are determined by three factors: flavor, cost, and production volume:
Level 7: Special and delicate flavors that leave a profound impression
Level 12: In addition to leaving a profound impression, must also have conversational appeal
Level 21: Rare production Level 7, typically with flavor performance exceeding Level 7
Level 39: Rare production Level 12, with flavor performance superior to Level 12
Level 95: Currently the highest grade, exhibiting tremendous variation from dry aroma to cupping, creating an extremely profound impression, with very limited production
FrontStreet Coffee's Ninety Plus Offering
FrontStreet Coffee also features a representative product from Ninety Plus: Zhumang. Roasted to medium-light, it's brewed with 90°C water for approximately two minutes, revealing special floral notes with excellent nectarine and tropical fruit flavors, along with oak barrel aroma.
What is Zhumang LEVEL UP 90+?
Ethiopia's heirloom varieties grow in fertile soil at altitudes of 1750-2000 meters, where appropriate temperatures combined with favorable rainfall enable Sidamo to surpass expectations for natural processed coffee. Natural processed beans typically have good sweetness but lack the clean brightness of washed beans. However, Zhumang coffee, in addition to the inherent quality of the beans themselves, owes its excellence entirely to proper post-harvest processing, temperature and humidity-controlled storage environments, and suitable roasting.
Ninety Plus beans differ from specialty coffee naming conventions, starting from flavor concepts. Zhumang means "Best approach" locally, inheriting the charming aromatics of traditional natural processing while offering rich, full-bodied fruit flavors. Generally, natural processed beans struggle to achieve clean, bright mouthfeel, but Zhumang possesses the bright acidity of washed beans combined with the rich body of natural processed beans. Floral and fruit flavors intertwine, creating a complex aftertaste.
