I know you've all been wondering what the RWW processing method is like and how it differs from traditional washed processing.

RWW stands for Red Wine Washed.

Since washed beans from the Yirgacheffe region have been less than ideal in recent years, we collaborated with the origin to develop an improved version of the washed processing method best suited for the local area.

After removing floating beans, the selected fully ripe coffee beans are placed in clean plastic buckets, similar to the preliminary steps of making red wine.

After fermentation is complete, they are washed with "flowing clean water" and then mechanically dried to the set moisture content.

In terms of flavor, it maintains the same clean cup quality as traditional washed processing, but adds a red wine-like rich body, along with delicate acidity and fuller sweetness.

Actually, the development work is very time-consuming, costly, and labor-intensive. When discussing with the origin, language barriers often increased the difficulty. Unlike previous collaborations with wealthy investors at the origin, we chose independent development for uniqueness this time.

The Essence of Yirgacheffe Coffee

The phrase "coffee enters the mouth, a hundred flowers bloom" most aptly describes Yirgacheffe, resembling the refreshing sensation of flowers stimulating taste buds and olfactory cells.

Yirgacheffe is located in the birthplace of Arabica coffee beans - Ethiopia. As a naturally occurring wetland area, Yirgacheffe originally meant "let us settle and thrive in this wetland."

Originally belonging to the Sidama region, the coffee beans produced near Yirgacheffe town have unique floral and citrus flavors, leading to its establishment as an independent and famous coffee-producing region in Ethiopia. Today, fewer and fewer people use "Yirgacheffe Sidama" to search for Yirgacheffe coffee beans.

Ethiopia's official language is "Amharic." The English "Yirgacheffe" commonly used in the Western world is a direct phonetic translation from the authentic name, so it's not surprising if some translate it as "Yirgacheff."

Just like wine, different climates, altitudes, soil conditions, and processing methods all result in different flavor variations in coffee beans!
