Coffee beans are the seeds of coffee fruits, which are also known as coffee cherries. After removing the outer skin and pulp of the coffee fruit, you get two coffee seeds, which are raw coffee beans. Mature coffee fruits are easily perishable after picking, so they need to be processed in time to facilitate storage and transportation. There are several methods for processing coffee fruits, including natural, washed, honey processing, etc. For the natural drying method, there is also the wine-like natural processing method. So what are the steps of these two methods, what are their advantages and disadvantages, and what are the differences between them?
Natural Drying Processing Method
The natural drying processing method is the most traditional processing method. After harvesting, the fruits are naturally dried in the sun. The steps are as follows:
1. After harvesting, coffee farmers directly place them in the drying field to dry in the sun;
2. During the drying process, they need to be turned and stirred appropriately to avoid uneven drying or fermentation;
3. After several days, they are dried until complete;
4. The dried raw beans are removed of their pulp and skin with a hulling machine to extract the raw beans.
Advantages: Coffee fruits processed by the natural processing method retain their mucilage during processing. The mucilage itself is sweet. During the natural drying process, sugar is transferred to the coffee beans, so the processed natural coffee beans have a stronger sweetness, rich taste, and distinct layers.
Disadvantages: There may be more defective beans, inconsistent appearance of beans, and they easily absorb odors from the ground and earthy flavors.
Wine-like Natural Processing Method
The wine-like natural processing method has two more words "wine-like" than the "natural processing method." Does this process involve alcohol? The answer is no. This method does not refer to adding red wine during the raw bean processing process, but its fermentation method and degree are similar to the fermentation of red wine. The processing steps are similar to the natural processing method, but with a longer fermentation time, hence the name. The steps are as follows:
1. After coffee farmers harvest mature red fruits, they directly place them in the drying field to dry in the sun;
2. During the drying process, the degree of fermentation is continuously monitored.
Advantages: Wine-like natural processed coffee beans have a higher rate of mature red fruits than ordinary natural processed coffee beans, and the fermentation time is longer, which increases the sweetness in the coffee, has relatively rich layers, and a taste similar to the fermentation flavor of red wine.
Disadvantages: This processing method consumes labor and time, so it cannot be mass-produced. Therefore, it is generally used to process some more expensive coffee beans.
