Of course, you cannot deny that with the advancement of industrialization, the washed processing method also emerged later. Compared to natural processing, washed coffee beans have relatively fewer defects and a more balanced flavor profile.
Why Does Washed Processing Have Fewer Defective Beans?
Because when washed coffee beans pass through the water channel, due to gravity, the mature ones sink (the reason being that ripe and unripe beans have different densities). In contrast, the uneven moisture in natural processing leads to inconsistent drying degrees, and each coffee cherry has different moisture content, so it's common for defective beans to be mixed together.
Although naturally processed coffee beans may not keep up with industrial trends, their advantages still outweigh their disadvantages, so they still maintain a certain share of the market. In distant Ethiopian coffee plantations, natural processing has become a trend. Plantation owners' creative thinking, while returning to more traditional processing methods, preserves more original flavors.
