Yirgacheffe is a small town in Ethiopia with an altitude of 1700-2100 meters, and it has become synonymous with Ethiopian specialty coffee. This area has been wetland since ancient times. In the local language, "Yirga" means "to settle down," and "Cheffe" refers to "wetland." Therefore, Yirgacheffe means "let us settle and thrive in this wetland."

Geographical Significance

Strictly speaking, Yirgacheffe is a sub-region of Ethiopia's Sidamo province, located in the northwestern part of Sidamo. Surrounded by mountains and lakes, it is one of Ethiopia's highest-altitude coffee-growing regions. However, the production methods and distinctive flavors here are so outstanding that Ethiopian coffee farmers take pride in their coffee bearing Yirgacheffe characteristics. Consequently, it has separated from the Sidamo region to establish its own identity and has become the most renowned producing area in Africa.

Cultivation History

Yirgacheffe is actually composed of surrounding coffee communities or cooperatives, including Idido near Misty Valley, Harfusa, Hama, and Biloa. Processing Methods

Yirgacheffe coffee beans are divided into two main categories based on processing methods:

Category A: Washed processing method, with grading standards set by the "Specialty Coffee Association of America" (SCAA), divided into Gr-1 and Gr-2, where smaller Arabic numerals indicate higher grades.
