East Timor Coffee Industry: Development and Flavor Profile
This is East Timor Tatamailau. You'll find it in whole bean form, and you might discover it brewed as the day's black coffee. The name of this coffee comes from a mountain in the center of East Timor island - Mt. Tatamailau, the island's highest point. Timor is an island located in the southern tip of the Southeast Asian maritime region. East Timor, also known as Timor-Leste, is part of the Timor island. The total area of this region is only 5,640 square miles.
The coffee produced here tastes delicious and is exported worldwide. The beans typically have medium to full body with a variety of flavors and low acidity.
When drinking our Timor coffee, you'll notice a clean mouthfeel, refreshing, and pleasant taste.
Understanding East Timor's Coffee Excellence

In the native Tetum language, "Tatamailau" means "grandfather of all." Legend tells that a boy saved a crocodile's life, and in return for his kindness, the crocodile transformed into an island. The ridges on the crocodile's back represent the mountain ranges of the island. The crocodile artwork on the bag was illustrated by Victor Melendez, whom you can follow on Instagram.
Growing Conditions and Processing
This coffee grows at lower elevations than East Timor Peaberry but is as complex as high-altitude coffee. It grows under shade, producing characteristics similar to high-altitude coffee. Shade trees slow down the growth of the beans, creating very dense beans. This coffee grows at around 1,250 meters elevation, making East Timor a lower altitude coffee. If you compare East Tatamailau with East Timor Peaberry, the peaberry coffee would grow between 1,300 to 1,800 meters.
This is a fully washed coffee from the Asia-Pacific growing region, which is somewhat unusual. Many coffees from this growing region are semi-washed.
This coffee undergoes a fully washed process, giving it bright floral notes, refreshing, clean coffee acidity reminiscent of Latin American coffees. This is a great coffee for immersion brewing techniques such as Sowden Softbrew, Clever dripper, or coffee press. This has a darker roast profile, so you'll find deeper roast sweetness. I'll also give you a close-up of the beans. Our Timor beans have been certified as Grade 1. This is the highest grade of coffee available and the best quality on the market. This means the beans have minimal defects and no primary defects are allowed. They have the most consistent size, using only the ripest cherries.
Roast Profile and Harvest Information
This coffee is a dark roast that releases rich chocolate flavors. The lack of acidity adds to the smooth taste. A slightly smoky hint is apparent, with a clean body. The East Timor coffee harvest period is typically June to September, with shipping from August to November. We consider the current coffee crop until the following year's crop begins to arrive in North America.

In East Timor, where Timor coffee is produced, Cooperativa Cafe Timor employs farmers from very small rural farms who often oversee no more than one hectare of coffee production land. These high-altitude coffee crops were originally planted by Portuguese colonizers but have evolved over time, creating a new hybrid variety with cleaner cup characteristics.

Grind Size: Fuji grind level 4
Brewing Method: Water-to-coffee ratio 1:14, 17g coffee grounds. First infusion with 25g water, let bloom for 30 seconds. Second infusion to 238g total water, extraction time around 2:30 minutes.
Analysis:
The KONO dripper doesn't have many ribs at the bottom, so the filter paper fits tightly against the dripper, achieving the purpose of restricting airflow. This allows water and coffee grounds to have longer contact and immersion time in the dripper, ensuring extraction time and rate for coarse grinding. This enables the coffee grounds to be fully extracted, enhancing the rich mouthfeel and making the flavor more concentrated.
