Monsoon Coffee: A Unique Processing Method

Monsoon coffee is a type of coffee made through a special processing method.

Coffee cultivation on the Indian peninsula was initiated by their colonizers—the British. As early as the 17th and early 18th centuries, British people were not as fond of tea as they are today; they preferred coffee. Naturally, growing coffee in colonies with suitable climate and soil conditions was an excellent choice. The Indian coffee industry rapidly developed under the demand and promotion of the British.

Before the invention of steamships, coffee was transported from India to Britain by sailing ships, often taking several months at sea. Coffee beans floated on the ocean for extended periods, and due to high humidity, they turned a curious yellow color by the time they arrived in Europe, with their flavor also changing. Later, when steamships became the main mode of transportation and the time for shipping coffee beans was shortened, people invented the Indian monsoon coffee processing method to continue enjoying this unique flavor.

In southern India, a typical air-drying process is applied, where coffee beans are intentionally stored in open warehouses exposed to monsoon winds to achieve increased viscosity and reduced acidity. The entire process lasts 12 to 16 months, during which the coffee beans expand to twice their original volume and develop a dull golden-yellow color.

Its flavor characteristics are that the coffee aroma is not very strong, but after extraction, it presents a complex combination of strong roasted peanuts, chocolate, caramel, and a heavy, rich viscosity. It somewhat resembles Mandheling coffee. Friends who like Mandheling will likely enjoy this monsoon coffee—similar yet distinct.
