Ethiopia Yirgacheffe Tianqi Rare Pearl Peaberry Washed Process

Brewing Equipment: Drip pot, pour-over, siphon, moka pot

Brewing Method: Using Hario dripper as example, parameters will vary according to different equipment conditions

1. Grind Size: Fuji R-4 scale 3.5, fine white sugar size

2. Coffee-to-Water Ratio: 16:1, total water injection 240cc, 15g coffee

3. Water Temperature: 88-90°C

4. Extraction Time: Total time 1 minute 55 seconds. Inject 30cc, bloom for 30 seconds. Continue injection to 240cc, then stop water. Remove dripper at 1 minute 55 seconds to complete

Roaster's Notes

From the coffee's origin, Ethiopia Yirgacheffe's extremely rare pearl peaberry. This batch is very special and extremely rare so-called "peaberries," specially selected by the plantation. Clean sweetness with long-lasting aftertaste.

Roasting peaberries is extremely difficult compared to regular coffee roasting. To fully cook the center point and enhance the sweetness and aftertaste given by this special coffee from heaven, we extended the yellowing stage slightly longer than usual, yet shortened the post-yellowing stage slightly more than normal. When first crack begins, the unique citrus and lemon aromas gradually emerge. To maintain the low tea-like notes, I let the first crack development stage slow down a bit, wanting to roast light yet to the depth where it can't go any lighter, preserving this fruity aroma while adding more textural aftertaste.
