Third, due to the considerable time required for transportation, basically the commercial beans you buy are more than six months after roasting. Many people don't understand why coffee must be freshly roasted and ground. Let me briefly explain. The coffee bean roasting process is actually carbonizing the coffee beans. Carbonized coffee beans are essentially activated charcoal. If you buy six-month-old activated charcoal to absorb formaldehyde, believe it has long lost its activity. Moreover, during these six months, it continuously absorbs other flavors, making its own taste more complex. Grinding is even simpler. After grinding into powder, the contact area with air increases, and the rate of deactivation multiplies. So when you see someone using coffee powder to make coffee for you, just chuckle. Of course, many large manufacturers have thought of many solutions in this regard. Mainly two types: one is the one-way valve, you can feel a hard thing on the coffee packaging bag. If you squeeze hard, you can squeeze out the air inside. Yes, that's it. Its function is that gas can only escape from inside but cannot enter from outside, effectively preventing flavor mixing during transportation. However, it still cannot solve the problem of flavor loss. The second is nitrogen canisters. As far as I know, only illy's large canisters use nitrogen. Small canisters contain regular air. Finally, there's the price. Commercial beans are finished products from abroad. When entering customs, they go through commercial tariffs, which are relatively high tariffs. You're just paying taxes.

Fresh roasting starts with directly purchasing coffee green beans. Theoretically, if you store them properly (without sprouting), green beans can be stored for a long time. But in reality, fresh roasters only purchase small amounts of beans each time, following the principle of roasting as much as they buy. However, what the beans have gone through before reaching your hands is completely uncontrollable. So finding good bean sources is the first step. But the advantage is that you can find those very famous estate beans. Look clearly, estate beans, not grown by ordinary farmers. Each bag of beans has an identity card, and some are even competition beans obtained from auctions.

Then comes roasting, which depends on individual skill. Generally, small commercial roasting machines certainly don't have as many functions as factory ones. This is where individual skill comes in. Good roasters are much better than ordinary roasters.

Since there are no transportation issues, basically you can place orders and pay, and they start roasting. It's possible to get coffee roasted just the day before. After simple degassing, you can brew coffee. Those who understand can drink coffee on the day when the beans are at their best condition.

Finally, there's still the price. When green beans enter customs, they are considered agricultural products. Agricultural products, you know? Not only are the tariffs low, but there are also subsidies, okay. So for the same quality, green beans entering customs and roasting yourself save an unknown amount compared to roasted beans entering customs.
