Most aromatic compounds in black coffee beans are concentrated in two types of oils. Let's explore this in detail.
First, let's understand what lipids are. These concentrated aromatic oils, also known as lipids, generally refer to fats, oils, and waxes. Most lipids in coffee beans are stored within the bean embryo, with only a very small portion covering the bean surface in wax form. Arabica's lipid content accounts for approximately 15-17% of bean weight, which is 60% higher than Robusta. Rich lipid content is one factor why Arabica far outperforms Robusta in aromatic expression, as many aromatic aliphatic carboxylic acids (including citric acid, malic acid, acetic acid, lactic acid, and formic acid) are all soluble in oils. Scientists studying Central and South American coffee also found that coffees with rich lipid content received significantly higher cupping scores.
After roasting, the lipids in black coffee beans actually increase rather than decrease, which contrasts with proteins and carbohydrates that mostly degrade during roasting. After coffee roasting, 75% of lipids present as triglycerides and 19% as fatty acids. Most of Arabica's aromatic compounds are concentrated in two types of oils: Cafestol and Kahweol, which are the best male and female leads of coffee aroma. However, Robusta's Cafestol content is only half of Arabica's, and it contains almost no Kahweol. Therefore, the Kahweol content (unique to Arabica) is often used to detect the mixing ratio of Robusta to Arabica beans in blended formulations.
Scientists also discovered that all aromatic essence of roasted coffee beans is concentrated in the oils of Cafestol and Kahweol, which weigh less than 3% of roasted coffee beans. Without these coffee oils, black coffee would become unremarkably bitter water, possibly inferior to soybeans. In other words, 97% of roasted coffee beans consist of carbonized fibers, caffeine, or other minerals unrelated to aroma and richness. If you spend 1000 yuan to buy 1000 grams of roasted coffee beans, the aromatic compounds you consume would only amount to about 30 grams, meaning each gram of coffee oil costs approximately 33.3 yuan!
To date, scientists have isolated over 800 aromatic compounds from roasted coffee beans. These are primarily created during the brief 8-20 minute roasting process, where sugars, proteins, organic acids, trigonelline, and fats from raw beans undergo caramelization, Maillard reactions, degradation, and polymerization, creating some of the most fragrant compounds in the world. Their complexity exceeds what current high-tech laboratories can replicate.
