No matter how excellent the roasting technique may be, it cannot transform mediocre commercial beans into specialty beans. Selecting good beans and eliminating defective ones is the first step in specialty coffee.

The word "terroir" refers to "taste of place"—where different soils, varieties, climates, and terroirs create different coffee flavors. It is the soul of specialty coffee. Without a unique regional character, it is not specialty coffee but rather ordinary commercial beans or uninspiring canned coffee.

When Nuessen first proposed "specialty coffee," he focused more on the relationship between upstream cultivation environments and coffee quality. Today, the Specialty Coffee Association of America redefines it as: "Carefully selecting the most suitable varieties, cultivated in the altitude, climate, and terroir most conducive to coffee flavor development.
