The Difference Between Specialty Coffee Beans and Commercial Coffee Beans
No matter how excellent the roasting technique may be, it cannot transform mediocre commercial beans into specialty beans. Only carefully cultivated estates or regions can, under the skilled hands of a roaster, reveal the charming "terroir." Selecting good beans and eliminating defective ones is the first step in specialty coffee.
The word "terroir" refers to "taste of place"—where different soils, varieties, climates, and terroirs create different coffee flavors. It is the soul of specialty coffee. Without a unique regional character, it is not specialty coffee but rather ordinary commercial beans or uninspiring canned coffee.
When Nuessen first proposed "specialty coffee," he focused more on the relationship between upstream cultivation environments and coffee quality. Today, the Specialty Coffee Association of America redefines it as: "Carefully selecting the most suitable varieties, cultivated in the altitude, climate, and terroir most conducive to coffee flavor development. Careful washed and natural processing, selecting the highest grade defect-free green beans, zero errors during transportation, delivered to customers. Through the roaster's exquisite craftsmanship, revealing the richest terroir, then using recognized extraction standards to brew delicious coffee."
Thus, specialty coffee begins with the highest grade defect-free green beans and ends with distinctive regional flavor in the cup. It should not only taste smooth but also be as mellow and sweet as nectar, with an immediate sensation of sweetness that soothes the throat—only then can it be called specialty coffee.
The biggest difference between specialty coffee beans and bulk commercial coffee beans from the New York Futures Exchange, such as Brazil Santos or Colombian "Supremo," is that commercial coffee beans taste monotonous and slightly bitter after drinking, requiring sugar to be palatable; specialty coffee beans have obvious regional flavors, with extremely rich acidity, aroma, sweetness, and body.
