The History and Science of Coffee

The history of coffee as a beverage spans far back in time, becoming popular globally with widespread influence.

Given this, the IARC (International Agency for Research on Cancer) collected and organized relevant medical research between 1991-1997, classifying coffee as a Class B drug. This classification was primarily because caffeine's effect on the nervous system is much lower than Class A drugs (such as amphetamines, heroin, etc.). For a healthy adult, the half-life of caffeine is approximately 3-4 hours, while its nutritional and medicinal value is relatively significant. Therefore, the EU recommends that normal adults limit their daily caffeine intake to 300 milligrams (mg).

Coffee Safety Concerns

The most concerning aspects of coffee are aflatoxin and ochratoxin contamination, especially in warm, humid island climates. Both toxins are produced by mold and can occur during raw or roasted bean stages. Ochratoxin can only be destroyed and decomposed at temperatures between 210-270°C. Coffee bean roasting occurs at temperatures between 210-270°C for 15-20 minutes. Therefore, ochratoxin residue in roasted beans after baking is generally much lower than aflatoxin (ochratoxin's destructive effect on the liver is far greater than the latter).

Storage and Preservation

Under standard packaging, storage, and transportation protocols, contamination of raw beans is typically not a concern, with an effective shelf life of up to one year. Reputable importers who mainly monitor storage environments can easily pass inspection standards. In contrast, IARC is more concerned about contamination of roasted beans and the preservation of their nutritional content. Since roasted coffee beans are dry, they continuously absorb moisture, flavors, and oxygen. In dry regions or countries, they can maintain freshness for about four to six weeks in room temperature environments without isolation from oxygen and moisture. Once ground, they can only maintain freshness for two weeks. Therefore, IARC recommends that coffee beans or powder should be packaged in micro-vacuum, one-way breathable bags within 2-3 hours of air exposure, and preferably stored in sealed glass or ceramic containers.

Additionally, artificial methods to extend shelf life (such as nitrogen-filled packaging and refrigeration) provide little benefit for preserving nutritional content. Natural nutritional components are protected by living mechanisms for longer-term preservation, but the natural nutritional components of roasted coffee beans are easily destroyed and diminished by oxidation and moisture absorption. Therefore, IARC believes that using coffee beans as quickly as possible is the best strategy for effectively preserving their nutritional content. Given this, Modo Coffee advocates for a healthy coffee drinking approach that uses small packages of coffee beans that should be consumed within two weeks. The optimal drinking period begins three days after roasting, as most test reports use samples from this day.
