Coffee Bean Storage Guidelines

All foods have expiration dates, and coffee beans are no exception. Freshly roasted bagged coffee beans can be stored for about one month, while vacuum-sealed coffee beans can be stored for up to about two months. Therefore, if you are someone who drinks coffee daily, we recommend buying half a pound at a time. Ground coffee can be stored for one week at room temperature or two weeks when sealed. After all this discussion, what kind of container should we use for storage?

One-way degassing valve bags are the most suitable containers for storing coffee. Coffee beans or grounds should be placed directly into one-way degassing valve bags immediately after opening. Coffee beans should be stored in an environment with low temperature and humidity, avoiding direct sunlight. It's recommended to consume them as soon as possible.

Effects of Improper Storage

Guangzhou has a hot and humid climate where coffee can easily grow mold due to improper environmental temperature and humidity, producing ochratoxin. This is a colorless crystalline compound that has very serious negative effects on human health, causing kidney poisoning, liver poisoning, and in severe cases, even leading to kidney failure or cancer. Even after high-temperature roasting, coffee beans still have 30% residue after five minutes. Therefore, whether coffee beans are roasted or not, large amounts of ochratoxin can be produced if stored improperly.

Therefore, when it comes to coffee storage, let me explain the several dangers of coffee beans getting damp.

Dangers of Damp Coffee Beans:

1. After getting damp, coffee grounds become more viscous and can clog coffee grinders, adversely affecting the machine.

2. Once coffee beans get damp, they can easily spoil and mold, which will significantly shorten their shelf life and is harmful to health.

3. It will affect the taste of the brewed coffee beverage.

Therefore, the four most important factors in coffee bean storage are "sunlight, oxygen, temperature, and humidity." Avoiding contact with these four elements is the best storage method.

Five Major Coffee Storage Mistakes

1. Refrigerating

Generally, the optimal tasting period for coffee beans is two weeks, and they can be stored in a cool place indoors. For large packages of coffee beans, you can divide them into vacuum-sealed bags after ensuring the beans have no moisture. This method prevents the beans from being affected by moisture when taken out multiple times for use, preventing spoilage. Even though low-temperature storage can extend the shelf life, we still recommend consuming them within a short period to enjoy the delicious taste of coffee itself.

If frozen coffee beans are opened immediately after removal, moisture will condense on the surface due to temperature differences, greatly damaging quality! Therefore, after removing divided coffee beans from storage, do not open them immediately. Let them sit at room temperature for 1-2 hours to thaw before use.

Remember that coffee beans removed from the refrigerator cannot be put back, to prevent moisture from affecting the flavor during freezing and thawing processes.

2. Storing in Hot and Humid Environments

Taiwan's weather is hot and humid. If moisture-rich air seeps into coffee beans, it will wash away the aromatic oils on the coffee surface and even produce unpleasant odors. Therefore, coffee beans must be stored in dry, cool places to prevent the beans from absorbing too much moisture or spoiling due to high temperatures.

Coffee beans fear heat (sunlight, heat sources) and moisture—as long as you grasp these key points, the lifespan of your coffee beans won't end prematurely:

→ Store in "cool" and "dry" places (away from direct sunlight. If using sealed containers, choose opaque materials. Don't remove coffee from original packaging; put the entire bag into the sealed container).

3. Excessive Contact with Oxygen

Roasted coffee beans have low moisture content, so they don't spoil easily. However, because coffee is a seed crop, it contains a relatively high content of fats. If it comes into contact with oxygen, it will start to sour and spoil. Therefore, it's better to use airtight containers that can block oxygen. When storing coffee, the most important thing is to block light and external air. For this reason, most coffee bags are aluminum-coated to prevent air from entering and light from penetrating.

The best storage method is using tin-plated cans to store coffee. However, if you visit most specialty coffee shops, you'll find that many stores use transparent sealed jars to store coffee. This is based on display considerations, as stores need to showcase the coffee to sell it. Coffee from these shops is usually sold quickly, so the possibility of bad flavors due to improper storage is very small.

4. Storing in Ground Form

We don't recommend storing coffee in ground form. Even if coffee beans are freshly roasted, once ground, their surface area in contact with air increases dramatically, causing very rapid oxidation. The freshness of the coffee will immediately be lost. Because coffee beans have low moisture content, they easily absorb moisture from the air, leading to oxidation and spoilage.

Therefore, we still recommend buying coffee beans normally. If you have already ground coffee beans into powder, try to consume them within the two-week fresh period.

Recommended Bagged Coffee Bean Brands

FrontStreet Coffee's freshly roasted single-origin bagged coffee beans have full guarantees in both brand and quality, suitable for brewing with various equipment. More importantly, they offer extremely high cost performance. A half-pound (227 grams) bag costs only around 80-90 yuan. Calculating based on 200ml per cup with a 1:15 coffee-to-water ratio, one bag can make 15 cups of specialty coffee, with each cup costing only about 5-6 yuan. Compared to cafés selling coffee for dozens of yuan per cup, this offers excellent value.
