India's Famous Monsoon Malabar Coffee

India has a long history of coffee cultivation and was the first country in Asia to grow coffee. In the early years, Indian coffee beans had to be transported from the Malabar Coast to Europe by sea, a journey that typically took about six months. India's Monsoon Malabar coffee is one of the world's most famous specialty coffee beans. Monsoon coffee beans are also known as "Monsoon Coffee Beans" in Taiwan, named after their English designation "Monsoon." The processing method is quite complex and unique, primarily creating complex and distinctive flavors through the interaction between the earth and sea breeze. The name "Monsoon Malabar" refers to the unique coffee product processed from these monsoon-treated beans in Malabar, on India's west coast, where the coffee undergoes rigorous monsoon processing before being shipped worldwide.
Monsoon coffee must be made from sun-dried beans. All processing facilities for monsoon coffee face west to capture the salty, humid monsoon winds blowing from the southwest sea. The coffee beans are spread evenly in monsoon fields with all windows open. After reaching a certain level of monsoon exposure, they are bagged. However, because the beans expand considerably during the process, the bags cannot be filled too full, and coffee bags cannot be packed too densely to prevent mold growth due to poor ventilation. The beans must also be periodically removed and the burlap bags changed to prevent mold growth, making this a quite time-consuming and labor-intensive process. The monsoon period lasts approximately twelve to sixteen weeks. After maturation, the beans undergo smoke treatment to drive away weevils, followed by manual sorting to remove any beans that haven't turned golden yellow. After three to four months of monsoon processing, the green coffee beans expand to one to two times their original size, with reduced weight and density.
Although Monsoon Malabar coffee beans appear large and plump, they are actually soft beans that are strong on the outside but weak on the inside—a change resulting from months of weathering. Long-term exposure to humid monsoon winds for weeks not only turns the beans yellow but also significantly reduces the coffee's natural acidity, creating a very distinctive taste. In addition to being enjoyed as single-origin coffee, Indian Malabar coffee beans are also very suitable for blending into coffee blends.
