What is Indian Monsooned Malabar Coffee?
Indian Monsooned Malabar Coffee, also known as Monsooned Coffee, was unintentionally created as a new flavor profile.
In the 17th and 18th centuries, India transported coffee beans to Europe via sailing ships, a journey that took six months. The green beans were stored in the bottom of the ship's hold, absorbing moisture and saltiness from the sea air. By the time they arrived in Europe, the beans had deteriorated. The spoiled green beans changed to a yellowish-brown color like rice grains, with almost no fruit acidity remaining, but they developed strong nutty and cereal flavors with a rich mouthfeel. Consequently, exporters conducted numerous experiments along the Malabar coast in southwestern India, where the salty and humid environment of the Indian ocean monsoon blows from late May to September each year, creating a similar golden-colored, low-acidity coffee. This is how "Monsooned Coffee," or wind-cured coffee, got its name.
Monsooned coffee must be made from dry-processed beans that fully absorb the salty, humid monsoon winds. After curing to a certain degree, the beans are bagged. The curing period lasts about twelve to sixteen weeks, after which the beans undergo smoke treatment and manual sorting. After three to four months of monsooning, the coffee beans expand to one to two times their original size. This process not only turns the beans yellow and reduces acidity but also gives the coffee a distinctive mature richness.

Flavor notes: Rich aroma of mixed nuts and pine with spicy hints; when cooled to warm or room temperature, it reveals a salty taste reminiscent of seawater.
