What is the cultivation history of Indonesian Sulawesi Toraja G1 coffee beans? FrontStreet Coffee's recommended pour-over data for Sulawesi coffee beans?

Sulawesi was formerly known as Celebes and is an island in Indonesia. Sulawesi Island is the 11th largest island in the world. Geographically, Sulawesi is surrounded by archipelagos: Borneo to the west, the Philippine island of Mindanao to the north, the Maluku Islands to the east, and Flores and Timor islands to the south. Many of these islands also produce coffee.

Speaking of which, several major islands in Indonesia produce many well-known and excellent coffees, namely Mandheling from Sumatra Island, state-owned Arabica estates from Java Island, and Toraja from Sulawesi (also known as Kalosi).

For centuries, Sulawesi Island was named Celebes. Like Java and Sumatra, Sulawesi also has volcanic terrain, with ten active volcanoes still present in the region. The Dutch began planting coffee on this island in 1750, exporting from the port of Ujung Panjang (also known as Makassar port) on the southwest side of the island. Today, some of Sulawesi's most famous coffees come from the Toraja mountainous area in the center of the island, where the Toraja people live. This batch consists of high-quality semi-washed beans from the Toraja mountainous area. Kalosi is its distribution center, so whether labeled as Sulawesi Toraja, Sulawesi Kalosi, or Celebes-Kalosi, all refer to high-altitude Sulawesi beans from this region. Only local buyers and collectors know exactly which small villages produce these high-altitude beans.

Toraja coffee is famous under the name Celebes Kalossi. Kalosi is the name from the Dutch colonial era. Because coffee is grown in relatively remote areas, it's impossible for coffee farmers to deliver it to traders themselves! Therefore, coffee farmers sell their coffee to middlemen, who then resell to exporters, while Rantepao serves as the centralized market for Toraja coffee.

This batch of Kalosi is produced in a high-altitude mountainous tribal area at 1,500 meters. This tribe actually has the conditions of a small cooperative because: 1) they are all clan relatives; 2) they found buyers for long-term cooperation themselves; 3) tribal farmers practice cooperative cultivation, concentrated initial semi-washing processing, and will select ripe cherry fruits for semi-washing processing, so the purchase price is higher than that of individual farmers in this region. Their buyer is a local who understands some English. Since she can speak the tribal language, I guess she should be considered of mixed descent. I don't know if her ancestors were Portuguese. In several emails, she mentioned wanting to take me to this small production area to visit the tribe, but unfortunately, our schedules and the harvest season didn't align well.
