Red Bourbon Coffee Beans

Generally, after coffee trees flower and bear fruit, the color change of coffee cherries follows this pattern: green > turning slightly yellow > turning slightly orange > turning mature red > then turning darker red when fully ripe. Therefore, some people call it the "Red Bourbon variety." In fact, Red Bourbon is precisely what we generally refer to as the Bourbon variety. Bourbon varieties grown at high altitudes typically have better aroma, brighter acidity, and may even have flavors similar to red wine when tasted.

To put it simply, the Bourbon variety is a coffee tree variety belonging to a branch of the Arabica species. It generally bears red fruits, called Red Bourbon. In addition, there are also Yellow Bourbon and Orange Bourbon. Yellow Bourbon has relatively lower yields but better quality.

The so-called Bourbon variety originates from Réunion Island in the Indian Ocean. When green fruits ripen, they turn bright red, while the Yellow Bourbon variety is a hybrid of Bourbon with other varieties, bearing yellow fruits when ripe.

According to Teacher Han Huaizong's book "Specialty Coffee Studies," Yellow Bourbon is a natural hybrid of Red Bourbon and the yellow-skinned Botucatu variety (Amerelo de Botucatu * Bourbon vermelho), a variant of Typica. It adapts well to Brazil's local terroir and climate, with yields higher than typical Red Bourbon, and its sweet and sour flavors are also superior to Red Bourbon.

Last December, I had the privilege of visiting Baisheng Village in Guoxing Township and saw many Yellow Bourbon cherries already ripe in the plantation. On impulse, I picked some fruits to take home for planting (bad habit). After returning home, I peeled the fruits and left the mucilage to dry naturally in the sun. After the mucilage dried, I directly sowed them in seed trays. According to books, they should germinate in about a month, but I had to wait until March of the following year to see the cotyledons. At one point, I thought they had all failed.

For the past six months, I haven't managed them at all, and the root systems have already shown signs of becoming pot-bound. I plan to move them to the farm for further cultivation and choose a permanent location when they reach 40cm in height.
