The original Arabica varieties spread from Ethiopia to Yemen were only Bourbon and Typica. These two ancient varieties have given rise to new varieties worldwide. The Bourbon variety was named after France successfully transplanted it to Bourbon Island. Bourbon yields 20-30% more than Typica, has broader leaves, and both coffee cherries and beans are rounder than Typica. Bourbon coffee generally offers rich, delicate flavors with excellent sweetness. The flavor characteristics of Santa Felisa Estate's Red Bourbon are: bright, wine-like acidity with excellent sweet notes.
Natural 22 is Santa Felisa Estate's natural processing method, where coffee cherries are allowed to ripen to 22° Brix sweetness before hand-picking, then dried on African raised beds for 25-30 days, slow-dried to 12% moisture content. The flavor characteristics of this processing method are: fruity notes, mild acidity, high body, and intense sweetness.

Guatemala's Renowned Coffee Estate
Santa Felisa, a famous coffee estate in Guatemala, was established in 1904 and is now managed by fourth-generation family members Anabella and Antonio. The estate is located in the Acatenango Valley, an indigenous Maya region where Maya natives have continued to work in the coffee estate to this day.
At altitudes ranging from 1560-1800 meters, the microclimate and fertile volcanic soil provide the coffee plantation with unique advantages, allowing coffee beans to mature slowly and perfectly absorb more natural nutrients from the volcanic soil. Santa Felisa Estate practices eco-friendly farming methods, combining agricultural science with ancestral knowledge while respecting the local ecology and indigenous people.
Meticulous eight-step processing methods combined with diverse tree varieties, careful organic farming, and insistence on hand-picking coffee cherries at 21° Brix sweetness—all these thoughtful details cultivate amazing coffee flavors that consistently rank among the top in Cup of Excellence competitions. Since 2011, they have held independent estate global auctions, which at that time was the only organic estate auction activity in the coffee world.
"Santa Felisa does not follow market mechanism price fluctuations, but rather follows the natural cycles produced by nature's laws and indigenous culture," says Anabella, adhering to the principle of "how to do better for plants and animals, our family and customers, and produce more unique coffee."

After leaf rust devastated Central America, they reflected more deeply on the importance and connection between the environment and the land. The estate is committed to:
- Reforestation and water source protection
- Using compost and no herbicides to protect the soil
- Not cutting shade trees to maintain soil fertility and protect biodiversity
- Using soil-friendly nutrients
In 2012, when leaf ravaged Central America, many surrounding estates saw entire coffee trees wither and die from the disease. However, Santa Felisa's organically cared-for coffee trees were robust and resisted the disease. When an even more severe leaf rust epidemic struck in 2013, reaching the point where chemical spraying became unavoidable, almost no organic estate in Central America was spared. Santa Felisa Estate reluctantly lost its organic certification.
Currently, Santa Felisa Estate conducts leaf rust prevention three times a year - twice using organic methods and once having to use chemical agents. Beyond this, everything remains the same as their original organic certification farming practices.
