Another major characteristic of Ethiopia is the very high proportion of domestic coffee consumption, because coffee holds a pivotal position in local people's daily lives. Data shows that among the annual production of nearly 6.5 million bags, nearly half is for domestic consumption, with only 3.5 million bags used for export.
To this day, Ethiopians still maintain the authentic "coffee ceremony." Through this ceremony, family and friends gather together to share emotions. During the ceremony, the eldest woman serves as the "hostess," responsible for roasting coffee on an iron pan, grinding it on-site, and brewing it with hot water using the local特有的 "Jebena" clay pot. The "hostess" pours the strong coffee into small cups one by one, then adds water to re-boil it twice more. The entire ceremony process takes about an hour and is the most important way for locals to express welcome and gratitude, as well as the center of people's social lives.
