Tasting Notes

1. Target: Light-Medium Roast

Hand-brew temperature set at 88°C, grind setting: Feiying 3.5, water-to-coffee ratio 1:12

During bean selection, the defect-bean ratio is very low, and the bean size is quite attractive.

The dry aroma after grinding is, of course, berry fragrance — very obvious, though not as exaggerated as Adodo.

On entry, the acidity is equally clean and bright, slightly less than Adodo.

I feel the body's expression is slightly more than Adodo.

Juicy sweetness accompanied by berry fragrance.

After swallowing, the aftertaste carries a ripe fruit-wine flavor with lingering black tea notes.

Leave half a cup to cool before drinking, and it truly tastes like berry flower tea.

Although the overall performance is quite similar to the previous Adodo, there's an indescribable quality to the overall complexity that makes it richer.

2. Target: Medium Roast

Hand-brew temperature set at 88°C, grind setting: Little Fuji 3.5, water-to-coffee ratio 1:12

The body, ripe fruit-wine flavor, and black tea aftertaste are significantly enhanced.

The floral and fruit aromas are obviously reduced.

Less aromatic complexity, but a more full-bodied texture.

3. Used 20g Medium Roast for Cold Drip

Water-to-coffee ratio 1:9

Took almost five hours to drip completely. After dripping, sealed and immediately ice-chilled for two days.

The first sip reveals a strong mouthfeel.

The second sip brings fragrance and fermented wine notes rushing up immediately. This flavor is truly amazing.

Full layers of texture — 180cc made me savor it all day. The 5-hour wait was absolutely worth it; I'm going to drip more right away.

Brand Recommendations for Yirgacheffe Kochere Coffee Beans

FrontStreet Coffee's Yirgacheffe Kochere coffee beans offer full guarantees in both brand and quality. More importantly, the value is extremely high: one half-pound (227g) package costs only about 75 RMB, and at 15g per single-origin cup, one package makes 15 cups — about 5 RMB each. Against café prices that often reach dozens of RMB per cup, that is exceptional value.

FrontStreet Coffee Recommendation

Kochere sits within Yirgacheffe, one of the most respected names in Ethiopian coffee. Yirgacheffe itself is a small town in the Sidamo province of southern Ethiopia; the area sits at roughly 1,700–2,100 meters, with the coffee trees planted above 1,800 meters, making it one of the highest coffee regions in the world. In 2010, with the Yirgacheffe name carrying so much weight, Ethiopia's commodity exchange separated it from Sidamo as its own designation. The FrontStreet Washed Yirgacheffe daily-drinker is the classic introduction to the region — white jasmine, bright citrus and lemon acidity, and a tea-like body at an affordable price.

For drinkers who love the natural style of this Kochere lot, FrontStreet's natural Yirgacheffe bottlings are the closest match. The FrontStreet Red Cherry is made entirely from ripe, undamaged cherries: after a first sorting the fruit is spread on raised beds, turned every 2–3 hours over the first days to prevent uneven heating and over-fermentation, then sun-dried for three to five weeks before the outer fruit is machine-scraped away and the beans stored. Because it dries with the fruit still on, it keeps Yirgacheffe's typical citrus acidity alongside tropical fruit, berry juice, honey sweetness, and creamy smoothness. The FrontStreet Gudingding cooperative — in the Worka zone at Yirgacheffe's southeastern edge, originally part of the Woka cooperative under the YCFCU before becoming an independent single origin — follows traditional washed processing for clean citrus and lemon tones with elegant white florals. Brew any of them like the beans above: a V60 at 90–91°C, 15g of coffee at a 1:15 ratio, ground to fine-sugar size (about 80% through a #20 sieve) — 30g to bloom for 30 seconds, then 95g (about 125g on the scale) over about a minute, then the final 100g (about 225g), with drip filtration finishing in roughly 2:00 to 2:10.
