South African coffee is characterized by its aromatic flavor and relatively low acidity. The northeastern region of South Africa is the country's main coffee-producing area, extending from Natal between Lesotho and Mozambique northward to the southernmost regions of Transvaal. It's worth noting that South Africa's coffee trees originate from Kenya and are of excellent quality. In 1975, only 1,000 hectares of land in South Africa were used for coffee tree cultivation, but by 1987, this had increased to 7,000 hectares, which is inseparable from government support and economic development. Interestingly, the country's coffee beans have more characteristics similar to Central American coffee beans – fragrant in flavor with low acidity.

Today a friend roasted a batch of Bolivian beans (after first crack) and shared some with me. I thought to myself, I don't seem to have heard of coffee beans from this country, so I quickly did some research.

Bolivia is the poorest country in South Africa. Farmers cannot afford pesticides, so they grow coffee beans at altitudes above 1,700 meters, under the shade of original jungle trees, absorbing the essence of organic soil to produce a unique flavor.

Therefore, this coffee is both organic and fair trade certified, and also received a high score of 92 from Coffee Review.

Let me share my experience with pour-over brewing: The coffee beans are medium-roasted, with a light dry aroma featuring clear nutty and woody notes. When tasting, the first impression is very smooth – you can't detect any unpleasant flavors, it's very pure and clean. The second sip reveals a deep fruit acidity with moderate body. It's quite pleasant to drink, with a slight bitterness and sweet aftertaste in the finish.

Today (November 15th) was my second pour-over. There was a dry aroma similar to braised flavors (star anise), and when drinking, there was a noticeable dark acidity with clear cocoa bitterness in the throat.
