Mexico is located at the northern end of Central America, at the uppermost edge of the coffee production zone. Mexico's coffee-producing regions start with the Coatepec and Veracruz regions in the north, the Pluma coffee from the Oaxaca region in the center, and the Chiapas highlands in the southernmost part, bordering Guatemala's Huehuetenango region. Most Mexican coffee is washed Arabica coffee, characterized by a very intense special aroma, somewhat like over-fermented fruit fragrance. The Chiapas peaberry beans from Mexico's southernmost region have a mild, delicate texture and a very special aroma.

Light Roast City (Fresh Aroma)

Rich fruit aroma with a wild quality, acidity that's not obvious and only appears several seconds after drinking, with a relatively thin oily texture, and a finish that slowly emerges at the back of the tongue. Has the aroma and taste of Pengfeng tea.

Medium Roast (General B)

Fruity aroma after fermentation, with subtle fruit acidity, a smooth and round mouthfeel, and the taste of ripe tea.

Dark Roast (General C)

Aroma of red vegetables, no acidity present, clean mouthfeel without impurities, with the sweet fragrance of immortal grass and wheat.

Mexico Chiapas Highland Organic Beans

La Union Majomut cooperative, established in 1983, is located in the highlands of Chiapas province. It's an organization composed of small-scale coffee farmers formed to promote the survival and improve the livelihoods of indigenous people, primarily of the Tzotzil and Tzeltal ethnic groups.

This organization has a total of 1,450 members across 25 communities, with each household's coffee cultivation area averaging only two hectares, which also includes growing corn and soybeans. Coffee is the main source of household income for these indigenous people. The La Union Majomut cooperative handles and sells the coffee produced by farmers directly to foreign traders, avoiding exploitation by traditional middlemen.

Coffee cultivation in this region began in the 1960s, initially using traditional farming methods (fertilizing, slash-and-burn). In 1992, they transitioned to organic farming and obtained organic certification in 1995. The cooperative's work includes: training community members in organic cultivation, teaching and consulting on various matters at different stages of coffee production. By adopting organic farming methods, they've avoided low-price crises while gaining quality recognition in international markets. The La Union Majomut cooperative also provides financial support to farmers, educational work, family environment improvements, community participation, and training in household sideline businesses... The cooperative's green beans are also highly recommended by Fair Trade organizations...

Fine acidity, noticeable oily texture, varied sweetness, citrus acidity, grapefruit acidity, spicy sweetness, East African spice flavors, after swallowing with the bitter-sweet aroma of red wine, finish with delicate berry-like sweet and sour notes.

V60 dripper, 15g of coffee, water temperature 90°C, grind level 3, water-to-coffee ratio close to 1:15

30g of water for blooming, blooming time 30s

Segmented brewing: Pour water to 110ml, wait for water level to drop to 1/3, then slowly continue pouring to 225ml and stop.

That is: 30-125-225g
