After much consideration, we finally acquired this renowned bean. This batch consists of Mocha coffee beans from the Matari region in Yemen, one of the oldest coffee origins. When this Yemen Mocha bean was roasted, biting into a bean revealed it truly resembles roasted cocoa beans (those who have made chocolate might understand what flavor I'm describing). Due to the excessive number of defective beans, we had been hesitant to stock them before. This time, we made the decisive commitment. The sorting process is extremely time-consuming, and there are many small stones. FrontStreet Coffee still insists on high quality, sorting the beans twice to allow some customers who have never tried them to taste this rare world-class famous bean.
Flavor Analysis
Generally, Yemen Mocha is mostly roasted to medium to medium-dark levels because with so many defective beans, not roasting them darker would make the flaws very apparent. We set our default roast at light-medium 4.0, hoping coffee enthusiasts can taste the rare excellent flavors of this bean.
Upon cupping, we were amazed - completely different from the Yemen Mocha we had tasted before. The dry aroma presented distinct nutty and cocoa notes. The wet aroma still had very obvious cocoa flavors with hints of floral notes. The acidity after entering the mouth was surprisingly velvety smooth. The aftertaste carried slight wine-like notes while the cocoa flavor persisted and extended throughout. The body was full-bodied, with rich complexity that didn't feel overwhelming, even cleaner than many other natural-processed beans. Truly a world-class bean.
