Vietnamese coffee beans, also known as "cà phê phin," require ordering 10 minutes in advance. Since French missionaries brought coffee to Vietnam 150 years ago, Vietnam has gradually developed its unique coffee culture.

The charm of Vietnamese coffee largely lies in its brewing process. It's not brewed with a coffee pot but with a special drip filter, with the coffee collected below in a vintage patterned glass cup. Like an hourglass counting time, each drop serves to savor the wonderful moments. To prepare it, place the drip filter over the glass cup, add coffee powder to the filter, press it with a perforated metal plate, and brew with hot water, letting the coffee drip drop by drop into the cup.

For those more particular about hot coffee, the cup is placed over a large bowl filled with hot water to keep it warm, since brewing one cup of coffee might take three to ten minutes, during which the hot coffee could cool down. Some people like to add a layer of very sweet condensed milk at the bottom of the cup, waiting for all the coffee to drip into the cup before mixing the coffee and condensed milk together to drink. For black coffee, you generally aren't given a straw, but if it has condensed milk, you'll get one. Only those with patience will wait for a full cup of coffee to finish dripping, then slowly drink it down, appreciating the beauty of slow living.

Preparation Method

Ingredients:

  • Gooseneck kettle (the thinner the spout, the better for pouring water)
  • Condensed milk
  • Coffee powder
  • Vietnamese drip filter (phin)
  • Coffee cup (must be transparent to be authentic, otherwise watching the process loses its appeal)

Instructions:

  1. Add an appropriate amount of condensed milk to the cup. Adding condensed milk is a characteristic of Vietnamese coffee.
  2. Fill the Vietnamese drip filter with coffee powder and shake it level.
  3. Screw on the press plate to compress the coffee powder appropriately. The tightness of the press plate screw should be adjusted so that the dripping completes in about three minutes.
  4. Place the drip filter on the cup, then pour a little water—just enough to wet all the coffee powder but not enough to drip through. This step is also used in filter coffee brewing, professionally known as "blooming."
  5. After about 20 seconds, add water around 90°C until full, then cover with a lid.
  6. Wait for the coffee to slowly drip and fill the cup.

When drinking Vietnamese coffee, don't rush to stir at first. You can first taste the acidity of the plain coffee, then mix it with condensed milk. In summer, you can also add ice.
