Nicaragua Coffee Beans - Finca La Picona Maracaturra Experimental Batch

Finca La Picona is located in Dipilto, Nueva Segovia, the northernmost part of Nicaragua. With an area of less than 5 hectares and an altitude of 1,300 meters, it borders Honduras, offering a panoramic view of Honduras from the farm. The farm is situated within a natural conservation area and possesses a unique microclimate. The farm owner, Olga Marina Gonzalez Cuadra, lives on the farm with her husband and son, and her husband also owns his own farm.

Twelve years ago, Ms. Olga purchased Finca La Picona. In addition to 5 hectares planted with coffee, another 5 hectares are natural conservation areas where various flora and fauna thrive. The farm has only one variety: Maracaturra, which is native to the farm. The coffee growing areas are interspersed with other plants, including bananas, citrus fruits, plums, mangoes, and avocados. Maracaturra's yield is not high, but its flavor is exceptional, combining citrus, yellow fruits, and chocolate notes, making it incredibly sweet.

Finca La Picona is a consistent winner at the Cup of Excellence, placing 4th in 2009, 17th in 2011, 20th in 2012, 16th in 2014, and remarkably securing the runner-up position in 2015! The international judges of the 2015 Cup of Excellence gave Finca La Picona a high score of 89.35. Considering that Nicaragua did not hold the Cup of Excellence competition in 2013 and 2016, and starting from when the farm was purchased in 2009, only 2010 did not result in a winning position - this performance is truly astonishing!

Spain's Right Side Coffee Roastery is collaborating with Finca La Picona for the second year. This year, they conducted several experimental batches at the farm. After harvesting the cherries, they first used the traditional siphon method to remove floating and damaged beans to avoid affecting coffee quality. Then, after pulping, the beans with all their mucilage intact were placed in fermentation tanks, with controlled temperature and oxygen removal (anaerobic), but the fermentation time reached 40 hours, much longer than usual. After fermentation completion, they were transferred to another water tank and underwent only one rinse, with the purpose of retaining some mucilage (semi-washed), before finally being sent to African drying beds for 20 days.

Nicaragua Coffee Beans Legendary Variety - Maracaturra

Maracaturra is a hybrid of Caturra and Maragogype. As expected, Maracaturra beans are quite large in size. The trees can grow very tall with broad leaves, but the yield is extremely low, completely opposite to Caturra.

Caturra is a natural variant of Bourbon, discovered in Brazil in 1937. The plants are short, easy to harvest, and high-yielding, quickly becoming a popular variety in Central and South American countries. Maragogype, on the other hand, is a variant of Typica, discovered in Brazil in 1870, and is currently one of the largest-sized Arabica coffee beans.

Since Maracaturra comes from Caturra and Maragogype, which are natural variants of Bourbon and Typica respectively, it can be said to combine the genes of these two coffee ancestors, resulting in an extremely interesting flavor profile!
