Introduction to Nicaragua Coffee Bean - Finca La Divina Providencia
Finca La Divina Providencia is located in Dipilto, where coffee is grown on 10 plots at altitudes above 1,350 meters. The current estate owner, Misael Sauceda Olivera, inherited the estate from his father Porfirio Sauceda, when only two plots were planted with coffee. He then gradually acquired surrounding farmland from neighbors to expand to its current scale. Through the owner's efforts, Finca La Divina Providencia has been shortlisted for the Cup of Excellence (COE) multiple times. The estate, which continuously improves the quality of its green coffee beans, ranked 24th when shortlisted in 2007, improved to 4th place in 2008, and bravely claimed the runner-up position in 2012.
This is the fourth Nicaraguan coffee bean that our shop has recently acquired. Regardless of the different estate names, we can find that these Nicaraguan coffees differ in green bean varieties and post-processing methods. Generally, green coffee beans can be processed using washed, natural, or honey processing methods. In terms of varieties, Nicaragua is best known for the large-grained Maragogype. In recent years, new varieties derived from different hybrids have surpassed previous ones in flavor, such as Maracaturra (a cross between Maragogype and Caturra), Pacamara (a cross between Maragogype and Pacas), or the long-grain Javanica variety successfully rehabilitated in Nicaragua. With these new varieties and processing methods, Nicaraguan coffee exudes a completely different charming charm than before!

How to Brew This Nicaraguan Coffee Bean?
For a pour-over of Nicaraguan coffee beans (medium roast), we recommend using 15 grams of coffee powder, water temperature between 88°C to 89°C, and a water-to-coffee ratio of 1:15. Use a Fuji grinder setting of 4. This pour-over extraction yields a clean and bright taste with abundant sweetness, multi-layered complexity, and persistent fruity aftertaste, featuring high sweetness and gentle acidity.
