Panama Casa Ruiz cooperative was established in 1979 and is one of the most famous cooperatives in the Boquete region of Baru Volcano. The headquarters is located in the valley surrounding Baru Volcano. The family has been passed down for 3 generations and now has over 300 small family farms and estates as partners from cultivation, processing to marketing. The member estates mostly have a hundred years of history, including Berlina, Maunier, Panamaria, and Cafe Ruiz... Unlike other cooperatives that sacrifice the environment to increase planting area for higher yields, Casa Ruiz and its partners follow local Boquete region traditions of environmentally friendly coffee cultivation. However, to improve green bean quality, unlike in the past, they have increased the rigor of every step in green bean processing, including green bean cultivation, processing, selection, and storage. Casa Ruiz is a frequent winner in the Best of Panama competition.
Geisha/Gesha Variety
Forbes once rated it as one of the "world's ten most expensive coffees," but now it's not just one of them - it's the most expensive coffee! In July 2017, Geisha green beans from Panama's Hacienda La Esmeralda set a sky-high price of $601 per pound. However, on September 13th, Ninety Plus (90+) Geisha coffee was auctioned at $50,001.5 per kilogram - that's 50,000 RMB per kilogram of green beans!
Geisha or Gesha, its name comes from Geisha Mountain in Ethiopia. Its pronunciation is the same as the Japanese Geisha, therefore Chinese people call it Geisha.
In recent years, in many international competitions, contestants have chosen Geisha coffee as their selection and won championships. For example, in this year's 2017 World Brewers Cup, Taiwanese contestant Wang Ce used 90+ Geisha as his selection and ultimately won the annual championship.
Geisha has excellent aroma, with Geisha floral notes, jasmine fragrance, bright fruit acidity like tamarind, lychee, apple, and orange. The aftertaste is sweet and clean, with a very smooth mouthfeel.
Coffee Processing Methods
This refers to the process of turning mature red fruits into dried green beans. Each processing method has its pros and cons, influenced by the natural environment and different needs of the production area. Therefore, each production area has its suitable processing methods. After removing the skin and pulp, it's soaked in fermentation tanks to ferment, clearing the mucilage remaining on the parchment. Then it's washed with water, having one of the conditions for specialty coffee - rich acidity.

- Filter: V60 or Wave cake filter. Using a V60 filter can bring out the rich flavor layers of this bean, while the immersion extraction of the cake filter can give this bean a more balanced flavor;
- Water Temperature: 90-92°C. Use high water temperature to bring out the floral and fruit aromas of the bean as well as more flavor compounds;
- Grind Size: Medium-fine grind
