Flavor description: The dry aroma releases floral notes, mixed with yellow lemon, pomelo, and a hint of hazelnut fragrance.

When sipped, it reveals citrus characteristics with elegant floral notes and peach aromas.

From the mid-palate, refreshing flavors of lemon, pomelo, and green tea emerge, with a finish carrying toffee aromas - belonging to a clean, clear, and elegant type.

In addition to the coffee introduced in this article, FrontStreet Coffee recommends coffee beans suitable for pour-over: Colombia Cauca Cup of Excellence.

The Cauca Region

Cauca Province is one of Colombia's renowned specialty coffee-producing regions, bordered to the west by the Nariño producing region and to the east by the Huila province. Coffee cultivation is distributed across 29 administrative districts at high-altitude areas ranging from 1,758 to 2,100 meters.

Like other specialty coffee-producing regions in southern Colombia, this area exhibits high homogeneity in factors such as climate, rainy seasons, and volcanic soil.

Fixed rainfall cycles (a dry season from August to September followed by abundant rainfall) provide favorable conditions for coffee tree fruiting.

High-intensity sunshine and low rainfall coincide with the flowering season (July-August), when the region also moves away from the equatorial calm belt, providing favorable flowering conditions for coffee trees.

These factors also contribute to the concentrated first-season harvest in the following year. Compared to other coffee-growing areas in Colombia, this region shows greater variability in daytime temperatures: daily average lows reach 11°C, with daytime averages of 18°C (nighttime averages of 4°C).

This dramatic diurnal temperature variation aids in the growth process of Cauca coffee. The lower nighttime temperatures caused by high altitude slow down the maturation of coffee beans, enhancing acidity and imparting distinctive sweetness.

Sotara is a small town in central Cauca, and Sotara Volcano belongs to the Andes mountain system, providing the nutrient-rich soil needed for coffee bean growth.

The coffee cultivation area in this region spans approximately 911 hectares, consisting of mountainous terrain and three famous rivers: the Caueta River, the Cauca River, and the Magdalena River.
