Canet is located in the highest altitude coffee growing area of Costa Rica's Tarrazu region.

Catuai is a single-gene variant of Bourbon, discovered in Brazil in 1937. It has better production capacity and disease resistance than Bourbon, and the trees are shorter, making harvesting more convenient. In terms of flavor, it carries lemon or citrus acidity with fruit-like sweetness.

This region is the most intensively cultivated fruit growing area in Costa Rica. The plantation owner primarily grows passion fruit, making coffee quite scarce. Coffee is only grown in a specific area and receives special care, with only mature red cherry fruits being harvested.

Raisin natural processing can be considered a double-fermented honey processing method. Coffee cherries are first dried to a raisin-like state, then the fruit skin is removed for honey processing and fermentation. This method results in more intense fermentation notes in the flavor, and preserves more mucilage than other honey processing methods. A 100% mucilage honey process truly delivers raisin-like flavors.
