General consumers or businesses have impressions of Brazilian estates as vast estates spanning thousands of hectares, multi-story green bean washing equipment and giant harvesting machinery, or reduced to mediocre Espresso blend fillers. In Taiwan, they're seen as the base for cheap traditional Manna blends, but many don't realize that on this vast South American land, there are actually many dedicated independent coffee farmers who continuously produce high-quality specialty green beans and frequently achieve excellent results in COE competitions.
Brazil COE third-place estate Sertãozinho Estate is located in the southern mountainous region of Minas Gerais state, at an altitude of approximately 1,200 meters, with an average annual temperature of 19°C (66°F) and average annual rainfall of 1,600mm. The excellent geographical location and high-quality climate environment create unique terroir, where high-level specialty coffee is nurtured and born. The farm itself has a 300-hectare tropical rainforest reserve, with the most striking feature being the symbolic representative of Sertãozinho Estate - a sacred tree Cariniana legalis over forty meters tall. According to the owner's rough estimate, it has been growing here for over 1,500 years.
The owner of Sertãozinho Estate is José Renato Gonçalves Dias. According to the owner, crop production has continued here from 1948 to the present day. The farm only uses organic fertilizers to provide plant nutrients during production to maintain the land's vitality. The estate has about 160 lifelong employees, providing good and sustainable living environments within the park, including comprehensive health and medical plans. Workers are also trained for professional development, and there's a school to provide good educational environment for their children.
Sertãozinho Estate's coffee production is completely different from typical large Brazilian estates - no machines replace human labor. From coffee berry harvesting to post-processing, all work is done by hand. Harvesting workers only pick fully ripe coffee cherries, sending them separately to pulping machines for pulp removal or directly spreading them on patios for sun drying. After processing is complete, coffee green beans are packed into jute bags until average moisture content drops to 11%, then transferred to wooden warehouses for 30 days of resting before export. Finally, each batch of coffee undergoes precise screening through density and electronic color sorters before completing the entire production process.
Additionally, Sertãozinho Estate has obtained ISO 9001/2002 Quality Management System certification, representing the estate's precise control over green bean production quality and yield. Each production batch has separate documentation and complete historical records, allowing the owner to trace production processes for quality control. The estate has also obtained UTZ Certified Sustainable Systems certification and joined BSCA (Brazil Specialty Coffee Association).

The Carvalho Dias family, founding members of the Brazil Specialty Coffee Association, has operated Fazenda Rainha since 1890. The estate owner's nephew Gabriel de Carvalho Dias is now responsible for management and operation. The estate near Minas Gerais has high terrain with undulating slopes. Due to geographical limitations, mechanized cultivation and harvesting are impossible. Coffee planting and harvesting are done entirely manually. Located at altitudes between 1,100 to 1,500 meters, with average annual rainfall of 1,800 to 2,000mm and average annual temperature around 19°C, these are quite ideal conditions for coffee cultivation. The green beans have solid texture and excellent flavor expression. Carefully controlling every operational process from planting, care, harvesting to post-processing, Fazenda Rainha dedicates full effort to producing excellent quality green beans.
Under the operation of Regina Helena Mello de Carvalho Dias and family members, maintaining excellent quality and unique flavor performance has also made the estate a frequent winner in Brazil COE cupping competitions, placing on the list in 2000, 2001, and 2005. In 2011, it achieved the honor of Brazil COE champion.

Fazenda Rainha belongs to the renowned and respected coffee family Carvalho Dias family. The four major estates under Carvalho Dias have won awards every year since the first Brazil COE competition in 1999, winning more than 12 times in 7 years. Pour-over Brewing Recommendations:
Brazil Fazenda Rainha. 15g coffee, medium grind (small Fuji ghost tooth grinder #4), V60 dripper, 88-89°C water temperature. First pour 30g water, 27-second bloom, pour to 105g then stop. Wait until powder bed water level drops to half, then continue pouring slowly until 225g total. Avoid tail section. Water-to-coffee ratio 1:15, extraction time 2:00.
