Yemeni Coffee Beans: The Legacy of Mocha
For coffee enthusiasts with some knowledge, when mentioning Yemeni coffee beans, it's easy to associate them with "Mocha."
Yemen has a long history of coffee cultivation. By the early 17th century, Yemeni coffee beans began to be exported to Europe from the southwestern port of Mocha. Europeans therefore referred to these Yemeni coffee beans shipped from Mocha port as "Mocha coffee." Ethiopia, located across the Red Sea from Yemen, also later used Mocha port for coffee bean exports, so that Ethiopian coffee beans processed using natural drying methods are also often considered Mocha.
Cultivation and Processing Methods
The cultivation methods for Yemeni coffee beans remain similar to those of 500 years ago, with almost all plants grown on mountain slopes ranging from 3,000 to 7,000 feet in altitude. Due to scarce rainfall, coffee trees must rely on their strong water retention capabilities to survive drought periods. The harsh growing conditions result in coffee beans that are relatively small in size but possess high hardness. The varieties of Yemeni coffee beans are quite complex, with recognized varieties including the small-bean Ismaili and ancient heirloom, as well as Adeni and Mattari varieties.
Yemeni coffee beans undergo natural processing. After harvesting, the coffee cherries are typically spread out in courtyards or on rooftops for sun drying. Some portions are even allowed to dry directly on the tree before harvesting (a method known as floating).
The dried cherries must be ground and hulled. Today, Yemen still preserves the ancient method of stone grinding for hulling, with the stone grinders powered by camels or donkeys.
Growing Regions and Export
Yemen has many coffee-growing regions, with those from Bani Matar (Bany Mattar) province's Mattari region being the most renowned, representing the highest quality among Yemen's exported coffee varieties.
The early port of Mocha, which shouldered the heavy responsibility of exports, had various names and spellings, such as Mocha, Mokka, Moca, Moka, Al-Mocha, Al-Makha, and so on. Mocha port was later abandoned due to silting, with exports now handled by Aden port to the east and Hodeida port to the north.
