The Crystal Mountains of Cuba

Cuba is both familiar and distant - familiar because Cuban baseball teams often win world championships at various levels, distant because Cuba is on the other side of the Earth in the picturesque Caribbean Sea. Like other Cuban industries, coffee is under state production management. The best coffee-producing region in Cuba is the Central Mountain Range (Escambray). Besides coffee, the Central Mountain Range also produces precious minerals like quartz and crystals, so it's also known as Crystal Mountain. Cuban Crystal Mountain coffee production is very limited and almost monopolized by Japan's Meiwa and France's Cafe Legal coffee companies. Cuban Crystal Mountain coffee is a typical island bean with clean and delicate mouthfeel, slight acidity that isn't strong but persistent, and a sweet melon and fruit fragrance in the aftertaste.

Cuban Small Crystal Characteristics

Cuban Small Crystal coffee raw beans are more yellowish in color, and the bean size is slightly smaller compared to Caribbean coffee beans. It uses natural water washing method, with sun-drying in the final stage to dry the coffee beans. There are few defective beans and empty shells, and the moisture content consistency of the coffee beans is high.

Roasting Profiles

Light Roast City (Fresh Aroma): When water is added, the coffee powder and hot water produce a strong honey sweetness. The mouthfeel is soft with a hint of minty freshness. The wheat aroma won't feel uncomfortable when sipped. The aftertaste leaves a refreshing feeling on the center of the tongue like mint gum passing through. This is a good coffee with acidity that isn't aggressive.

Due to the slightly lower moisture content of the coffee beans (between Brazilian beans and East African beans), the bean body is softer, and when entering deeper roasts, the lactone esterification creates a very smooth and gentle mouthfeel.

Dark Roast (General C): Pure wheat sweetness, with blueberry jam's sweet and fruity acidity discovered in subtle details. It might also be masked by the brown sugar water-like aroma that's too strong. The aftertaste is a very persistent melon and fruit sweetness that renders in your mouth.
