Tomoca Coffee: Ethiopia's Finest
Many people say this is the best coffee they've ever had in the world. I ordered a cup of "sprice" - an Eastern-flavored green tea coffee that felt quite wonderful.
Besides famine, when some people hear Ethiopia, their impression should be: coffee!!!
Common pour-over single-origin coffees in coffee shops include Sidamo, Yirgacheffe Natural, and pour-over - all these beans come from Ethiopia, which is also the birthplace of coffee worldwide.
The Legend of Coffee's Origin
According to legend, coffee originated in the town of Kaffa in southwestern Ethiopia. One day, a shepherd was tending his sheep when he noticed the flock suddenly became very excited. He observed the sheep's movements and discovered that they became particularly excited after eating the fruit of a certain tree.
Driven by curiosity, he tried eating this fruit himself and experienced its refreshing effects. He named the fruit after his hometown, and from that moment, coffee entered human life.
Tomoca Coffee: Ethiopia's Premier Coffee Shop
The best coffee shop in Ethiopia is undoubtedly Tomoca Coffee. This coffee shop was established in 1953 as Ethiopia's first company emphasizing specialty coffee bean roasting techniques. Where do they source their raw materials? Naturally, from coffee's birthplace - Kaffa town!
Starting from Kaffa town, they gradually collected beans from various Ethiopian highland coffee-producing regions, including Sidamo and others. Why specifically choose beans from highland areas? Because beans grown in these highland regions benefit from excellent climate conditions and fertile soil, making the acidity and aroma of coffee beans particularly distinct, creating Tomoca Coffee's optimal flavor!
The Tomoca Coffee Experience
Tomoca Coffee's shop is quite small but reserves ample storage space. The main beans they sell are "dark roasted Arabica blend" and "medium roasted single-origin beans." Occasionally, you might have the chance to buy lightly roasted beans. When I take guests shopping there, I mainly recommend the medium roasted single-origin beans because the flavor profile is purer!
Brewing Methods
Having happily purchased Ethiopia's best beans, how should you brew them at home for the most authentic taste???
Since I have a fairly complete collection of coffee equipment at home, I've tried the following methods:
- Metal filter pour-over
- Flannel filter pour-over with Little Pegasus grinder set to 3.5
- Moka pot (not recommended)
- French press (also not recommended)
- Pot-brewed coffee with Little Pegasus grinder set to 2.5
I've personally tested all these methods and prefer the fifth one - pot-brewed coffee. Perhaps because this method comes closest to Ethiopia's "coffee ceremony"!
The Ethiopian Coffee Ceremony
The coffee ceremony is always handled by the woman of the house. Cups are placed on a low table, and raw beans are "roasted" fresh over charcoal, letting guests first enjoy the aroma. Next, water is heated and beans are ground (the truly traditional method uses charcoal, just like the lady in my photo). However, because the flame is very small, heating water takes a long time. During this waiting time, the woman burns her personally prepared herbal blend as incense, helping everyone relax while waiting. Once the water boils, the ground coffee is poured into the pot and simmered briefly before beginning to pour and distribute to guests. The first cup is always the strongest. After finishing one cup, another is served, and then another. Usually, three cups must be drunk, especially the third cup, which represents the host's highest blessing to the guest - it must be finished to show proper respect!
The Perfect Brewing Method
Because pot-brewed coffee comes closest to the coffee ceremony brewing method, I believe it tastes most similar to how locals brew their coffee, and the flavor is purer than any other brewing method. According to the recommended coffee-to-water ratio on Tomoca Coffee's packaging: "10 grams of coffee to 180ml of water. When brewing, don't use just-boiled water - use slightly cooler water to preserve the coffee's flavor."
Conclusion
Although Tomoca Coffee is the best coffee bean we can bring back from Ethiopia to Taiwan, when actually brewed, it still cannot compare with any traditional coffee shop on the streets of Ethiopia.
