Guatemala is located in the Central American isthmus, with many volcanic mountain ranges and plateaus that produce high-quality Central American high-altitude, extremely hard coffee beans. It ranks as the world's 9th largest coffee bean producer. Guatemala's main coffee producing regions include eight major areas: Antigua, Huehuetenango, Atitlan, Coban, Fraijanes, San Marcos, Acatenango, and New Oriente.

All coffee beans produced in Guatemala, which boasts these eight coffee regions, are Arabica varieties grown in high-altitude terrain under subtropical climate conditions. The region features abundant and stable rainfall, as well as fertile volcanic ash soil, creating extremely favorable natural environmental conditions for coffee cultivation throughout the country. Each region possesses unique flavor profiles with excellent acidity, fruity notes, and a smooth, mellow mouthfeel, placing them among the world's top-grade coffees suitable for single-origin consumption.

The Acatenango region is located in Guatemala's southern mountain ranges, adjacent to the Antigua region. The entire area is dominated by the Madre plateau. Due to its natural conditions being similar to Antigua, it has become one of Guatemala's famous eight major producing regions.

Finca Santa Rita Estate

Finca Santa Rita is located 60 kilometers west of Guatemala City, very close to Lake Atitlan. It is classified by Guatemala's official coffee management authority Anacafe in a micro-region called Nican. This micro-region is not part of any specific regional division and is considered independent in the annual Cup of Excellence (COE) competition.

The current operator of Finca Santa Rita, Dariush Echeverria, is the fifth-generation successor of the Echeverria family, which began growing coffee in the Chimaltenango province in 1876. In 1996, the estate received organic certification from OCIA (though document copies are not currently available in Taiwan) and also holds SMBC Bird Friendly certification (Smithsonian Bird Friendly). The estate covers 286 hectares, with only 96 hectares dedicated to coffee cultivation, while the remaining land serves as habitat for plants and wildlife, making it truly deserving of its Bird Friendly certification. This estate has over 100 years of history, features volcanic soil, and is one of Guatemala's oldest coffee estates. The coffee varieties grown include Bourbon, Typica, and Gesha.

Pour-over: V60 dripper, grind at 3.5 on Fuji R440, water temperature around 90°C

French Press: Recommended grind setting 4, water temperature 90°C

Siphon: Recommended grind setting 4, water temperature between 90-91°C

AeroPress: Recommended grind setting 3.5, water temperature 90°C
