Colombia's Premium Coffee Regions
Colombia features diverse terrain with numerous high mountains, providing excellent natural conditions for coffee production. Particularly in the southern producing regions of Cauca Province, Nariño Province, Tolima Province, and Huila Province, Huila consistently achieves the highest frequency of awards in the annual Cup of Excellence. To help consumers worldwide better understand Huila coffee, the province held the "Best of Huila" competition in 2013. During the preliminary round, 92 coffee samples from various parts of Huila competed for entry into the finals. After five days of intensive cupping following CoE standards, 25 coffees scoring above 85 points advanced to the finals. Finca La Cumbre was one of the award-winning farms.
Finca La Cumbre: Peak Excellence
Finca La Cumbre is located in Guadalupe, Huila, Colombia, at an altitude of 1,600 meters. The farm owner, Luis Guzman, cultivates coffee varieties including Caturra and Castillo. When lightly roasted, it offers rich aromatics with floral, brown sugar, and creamy sweet notes in the dry fragrance, while the wet aroma presents elegant citrus acidity. The cup flavor features bright fruit acidity with grapefruit and sweet lemon tones, but the persistent brown sugar sweetness creates a balanced mouthfeel with a minty cooling sensation in the aftertaste.
When medium-dark roasted, the dry fragrance reveals spicy notes and roasted almond aromas, while the wet aroma presents orange peel fragrance, caramel sweetness with pine phytoncide freshness. The cup texture is smooth with noticeable sweetness, where chocolate bittersweetness blends with cinnamon spice to create a balanced, full-bodied flavor profile.
Brewing Recommendations
FrontStreet Coffee suggests the following brewing parameters:
- Pour-over: V60 dripper, grind with Fuji R440 at setting 3.5, water temperature around 90°C
- French Press: Recommended grind setting 4, water temperature 90°C
- Siphon: Recommended grind setting 4, water temperature 90°C-91°C
- AeroPress: Recommended grind setting 3.5, water temperature 90°C
