Flavor Description:
Floral, apricot, molasses, caramel, black tea, roasted cocoa aromatics, sweet and bright acidity, sweet and rich mouthfeel.
Introduction:
Located in the Yirgacheffe region of Sidama Province, this area is renowned for producing coffee with distinctive and representative flavors that are widely recognized. In product classification, it stands as its own category, always holding a significant place in the coffee market.
Yirgacheffe itself is a small town with approximately 20,000 people. The three adjacent small producing regions - Wenago, Kochere, and Gelena Abaya - produce coffee with flavors virtually identical to Yirgacheffe, so they are similarly classified under the Yirgacheffe regional category.
While Yirgacheffe shares cultural and geographical similarities with neighboring Sidama, it seems to be particularly blessed with exceptional natural conditions. Top-quality Yirgacheffe coffee, with its floral notes, bright citrus fruit acidity, lemon-like aromatics, and silky smooth mouthfeel, always captures the attention of enthusiasts. Amidst the growing wave of the specialty coffee industry, coffee production from this region has consistently been a focal point for international buyers.
Hafursa Cooperative joined the Yirgacheffe Small Farmers Cooperative Union in 2002 and has obtained both Fair Trade and Organic certifications. Members of the Hafursa Cooperative grow coffee using shade cultivation methods on land near their homes, intercropping with bananas and other nitrogen-fixing crops. All planting is done manually with organic fertilization methods, using ecological protection and natural methods for pest control.

Pour-over (V60): Grind size 3.5 (Japan Fuji R440), water temperature 90°C
French Press: Recommended grind size 4, water temperature 90°C
AeroPress: Recommended grind size 3.5, water temperature 87°C
Siphon: Grind size 4, water temperature 90°C
