Flavor Profile: Distinctive red wine aroma, with peach as the main note, slightly spicy, rich creaminess, and complex layers.
This coffee has been evaluated by the Ethiopia Coffee Exchange as a Grade 1 specialty coffee.
The fresh coffee cherries are spread on raised African drying beds. During the first few days, manual inspection and turning are required every three hours to prevent over-fermentation and spoilage of the berries. Depending on weather conditions, the natural drying process typically takes 5 to 6 weeks to complete, followed by hulling.
Sidamo is located in the southern region of Ethiopia, cultivated at altitudes between 1400-2000 meters. Sidamo offers balanced flavors with high sweetness. Its body is fuller compared to Yirgacheffe, especially the acidity and sweetness produced during the natural pulp fermentation process, which, combined with coffee's inherent cocoa bitterness, gives certain batches of Sidamo an intoxicating flavor reminiscent of liquor-filled chocolates.
