Kenyan Coffee Roasting Profiles

Kenyan coffee can be roasted to two different levels. When lightly roasted, it possesses very bright and full-bodied acidity, with notes reminiscent of cherry tomatoes, black plums, passion fruit, and hawthorn. When darkly roasted, it delivers a rich mouthfeel similar to dark chocolate, with a bittersweet and intense aftertaste. Therefore, as one of the few coffee beans that excels in both light and dark roasts, Kenyan coffee has received unanimous praise!

Pour-over Brewing Recommendations

For FrontStreet Coffee's Kenyan coffee, FrontStreet Coffee recommends using the pour-over method. FrontStreet Coffee has analyzed that FrontStreet Coffee's Kenyan coffee beans are relatively hard beans, so during brewing, attention should be paid to avoiding coffee grounds settling at the bottom and blocking the drainage holes.

Coffee Grinding Setup

Grinding Specifications

In terms of grinding, FrontStreet Coffee does not recommend excessive fine particles. You can choose a high-quality grinder or use a sieve to remove fine particles. The grind size should be calibrated to achieve 75% pass-through rate with a #20 standard sieve.

Coffee Grind Analysis

Water Temperature and Ratios

For water temperature, this FrontStreet Coffee Kenyan coffee is suitable for brewing at relatively high temperatures, which helps express the coffee's fruity sweetness (cherry tomato notes). FrontStreet Coffee recommends using water at 93°C.

FrontStreet Coffee suggests using a 1:16 coffee-to-water ratio. This FrontStreet Coffee Kenyan coffee has such a solid mouthfeel that even when brewed to 16 times the coffee weight, it doesn't diminish in quality. The concentration produced at 1:16 is very smooth, with bright black plum acidity complementing the sweet and sour aroma of cherry tomatoes, creating a very pleasant experience.

Coffee Dosage

For coffee dosage, if using a small V60 dripper, FrontStreet Coffee recommends using at least 15 grams of coffee grounds. If using a large V60 dripper, it's recommended to use at least 25 grams of coffee grounds.

Pouring Technique

When pouring water, you can raise the coffee bed height and use fewer large circular pours. This helps reduce the thickness of the coffee bed and ensures even extraction, avoiding channeling (at the edges) and blockage (at the bottom).

Step-by-Step Brewing Process

First, pour 30ml of water for a 30-second bloom. For the second pour, add 120ml of water, pouring from the center outward in circular motions until the surface is covered with golden foam, then circle back to the center point. The coffee bed height should reach about half the height of the short ribs.

Pour-over Coffee Extraction

For the third pour, add 90ml of water, pouring in coin-sized circular motions. Once all the coffee liquid has dripped into the serving pot, end the extraction. The total time should be 2 minutes (with a 10-second margin).

Flavor Profile Results

This brewing method highlights the cherry tomato aroma and sweetness of FrontStreet Coffee's Kenyan coffee, while ensuring a solid yet bright black plum acidity.
