Kenyan Coffee Roasting Profiles

First, pour 30ml of water for a 30-second bloom. For the second pour, add 120ml of water, pouring from the center outward in circular motions until the surface is covered with golden foam, then circle back to the center point. The coffee bed height should reach about half the height of the short ribs.
For the third pour, add 90ml of water, pouring in coin-sized circular motions. Once all the coffee liquid has dripped into the serving pot, end the extraction. The total time should be 2 minutes (with a 10-second margin).
