The Jamaicans are quite rigid about this approach, never processing Blue Mountain coffee cherries using different methods. This dedication has contributed to the refined and smooth sensory characteristics of Jamaican Blue Mountain coffee. As is well known, Japan is the primary consumer of Jamaican Blue Mountain coffee, not because of its prestigious background, but because its flavor profile—low bitterness, mellow aroma, and low acidity—better aligns with Japanese sensory preferences for coffee.

R.S.W Blue Mountain Estate is located in Jamaica's designated Blue Mountain growing region. The letters R.S.W refer to 100% Blue Mountain coffee beans produced from its Resource, Sherwood Forest, and Whitfield Hall estates. The coffee grown in these three regions has an average altitude of approximately 1,200 to 1,600 meters. R.S.W is one of the highest-altitude estates in the Blue Mountain region. Due to the significant elevation, cool mountain mist often envelops the area in the afternoons, which is highly beneficial for coffee tree growth, avoiding the intense midday sun and allowing coffee cherries to develop more completely with better nutrient absorption.

After harvesting, all ripe coffee cherries from R.S.W Estate are centrally processed at Sherwood Forest's own washed processing facility. Throughout the entire washed processing operation, the facility manager maintains complete control, processing different batches of R.S.W Blue Mountain coffee in small quantities. This approach significantly contributes to consistent quality.

Sherwood Forest processing facility uses washed methods to remove the coffee's mucilage layer. Unlike many current Blue Mountain processing facilities that use machines to forcibly remove the mucilage layer for faster processing, R.S.W Estate insists on not using machines to accelerate the process, instead choosing the more labor-intensive washed processing method. This excellent washed processing method allows green beans to undergo appropriate fermentation in a favorable environment, during which the coffee beans absorb the sweetness transformed from the mucilage layer. Although this process requires greater effort and attention to coffee processing, it results in more abundant and full-bodied coffee flavors.

Additionally, after washing, R.S.W Estate abandons machine drying methods, instead sun-drying all these parchment beans to 11%–12% moisture content using 100% natural sun-drying techniques. This sun-drying process allows the green beans to undergo another transformation, making the overall aroma and viscosity of R.S.W coffee even richer and more substantial. Finally, defective beans are manually removed by hand-selection to create a perfect product.
