How to Use Clever Dripper to Brew Delicious Coffee - Correct Usage Guide for Grind Size, Water Temperature, and Coffee-to-Water Ratio
The Clever Coffee Dripper is an interesting brewing device invented by Taiwan's EK Int'l company. As long as you master the coffee amount, ratio, grind size, water temperature, and time, you can consistently produce a delicious cup of coffee.
What Makes the Clever Dripper Special?
The key design of the Clever Dripper lies in the piston valve at the bottom of the filter cup. When hot water is poured into the filter cup, the water pressure automatically seals the piston valve to stop water flow, allowing the coffee grounds to fully steep in the water.
After the steeping is complete, place the filter cup on a mug. The base receives pressure that opens the piston valve, and the coffee will slowly flow into the cup.
The Clever Dripper can be said to combine the advantages of both French press and pour-over filter cups. It provides the complete steeping environment of a French press while maintaining the filtering function of a pour-over filter cup.
Clever Dripper Brewing Parameters Tutorial
Grind Size
Brewing coffee with the Clever Dripper is similar to using a filter cup with paper filters. For the same coffee beans at the same water temperature, coffee-to-water ratio, and extraction time, if the grind is too coarse, the coffee flavor is likely to be under-extracted, leading to a flat taste with lack of complexity. If the grind is too fine, the coffee flavor is likely to be over-extracted, meaning that after the flavor compounds are extracted, the coffee grounds continue to contact hot water, releasing woody and other unpleasant flavors, resulting in strong coffee flavor but with impurities.
FrontStreet Coffee recommends using medium-fine grind (75%-80% pass-through rate on standard 20-mesh screen) for medium-light roast coffee beans with the Clever Dripper; for medium-dark roast coffee beans, use medium-coarse grind (65%-70% pass-through rate on standard 20-mesh screen).
Water Temperature
If the water temperature is too high, the coffee flavor will release faster, leading to over-extraction. If the water temperature is too low, the coffee flavor release will slow down, leading to under-extraction. FrontStreet Coffee recommends using 90°C-91°C for medium-light roast coffee beans with the Clever Dripper; for medium-dark roast coffee beans, use 88°C-89°C.
Coffee-to-Water Ratio
FrontStreet Coffee uses the SCA Golden Cup extraction range (extraction rate: 18%-22%, concentration: 1.15%-1.45%) as a reference standard. Through brewing experiments with different coffee-to-water ratios and filter cups, we found that using a 1:15 ratio generally results in extraction rates between 17.79%-18.73%. Although this is barely at the edge of the Golden Cup standard, sensory testing revealed very suitable flavors that work for brewing most coffee beans.
Steeping Time
FrontStreet Coffee previously conducted a comparison of steeping times with the Clever Dripper, testing 2, 3, 4, 5, 6, and 10 minutes respectively. Through comparison, the flavors from 2-4 minutes were better, with small tomato and pineapple flavors dominating. Within this range, the longer the time, the more prominent the sweetness. This experiment shows that the Clever Dripper produces better flavors when steeping light roast coffee for about 3-4 minutes.
Next, FrontStreet Coffee will demonstrate brewing using Yirgacheffe Natural Red Cherry. Water temperature: 90°C, coffee amount: 15g, coffee-to-water ratio: 1:15, grind size: medium-fine (75% pass-through rate on Chinese standard 20-mesh screen), steeping time: 4 minutes.
① Fold the filter paper and place it in the Clever Dripper. Place the Clever Dripper on a container, and use hot water to wet the filter paper while simultaneously preheating the equipment.
② Move the Clever Dripper to the electronic scale (the valve will automatically close at this time). Pour the ground coffee into the center of the filter cup, directly pour in 225ml of water, ensuring all coffee grounds are wetted, then cover with the lid and wait for 4 minutes.
After steeping is complete, move the Clever Dripper to the container and open the valve to filter the coffee liquid from the filter cup.
