What is a Clever Dripper?
The Clever Dripper is a type of coffee dripper, and the coffee it produces is also called pour-over coffee. Compared to common drippers where water flows directly through the coffee grounds and drips down, the Clever Dripper features a piston valve design. When pouring water, the water pressure keeps the piston valve sealed, preventing water from flowing out of the dripper. Only when the dripper is placed on a cup, which forces the piston valve open, will the water flow down.
Therefore, the Clever Dripper is a coffee dripper that combines both drip and full-immersion brewing principles. This design effectively solves problems for coffee beginners who may not be able to control water flow well or use inappropriate grinding levels for coffee beans. Through brief sealed steeping, extraction can be more complete.
Should Beginners Get a Clever Dripper?
Overall, the pour-over coffee made with a Clever Dripper has relatively stable quality, with basically no failed brews, making it very easy to operate. It's suitable for both beginners and experienced players, and it's affordable and high-quality—definitely worth getting!
What Should You Pay Attention to When Brewing Coffee with a Clever Dripper?
Brewing coffee with a Clever Dripper is similar to using a dripper with filter paper. The parameters for brewing coffee with a Clever Dripper can be the same as those for regular pour-over coffee.
For the same coffee bean, with identical water temperature, coffee-to-water ratio, and extraction time, if the grind is too coarse, the coffee flavor tends to be under-extracted, resulting in flat flavor with lack of complexity.
If the grind is too fine, the coffee flavor tends to be over-extracted. This means that after the flavor compounds have been extracted, the coffee grounds are still in contact with hot water, releasing woody and other unpleasant flavors, resulting in strong but impure coffee flavor.
FrontStreet Coffee suggests using medium-fine grind (75-80% pass-through rate on a #20 standard sieve) for light to medium roast coffee beans, paired with 90-91°C water temperature. For medium-dark roast coffee beans, use medium-coarse grind (65-70% pass-through rate on a #20 standard sieve), paired with 88-89°C water temperature.
What's the Difference Between Clever Dripper and V60 Pour-Over Coffee?
FrontStreet Coffee used Ethiopian Yirgacheffe Natural Red Cherry coffee beans for this experimental comparison. Brewing parameters were as follows: 15g coffee beans, medium-fine grind (75-80% pass-through rate on China's #20 standard sieve), 90°C water temperature, and 1:15 coffee-to-water ratio.
Clever Dripper Brewing Steps:
Fold the filter paper and place it inside the Clever Dripper, put the Clever Dripper on a container, and use hot water to wet the filter paper while preheating the equipment. Then move the Clever Dripper to the electronic scale (the valve will automatically close at this point) and pour the ground coffee into the center of the dripper.
First pour 30g of hot water, start the timer, and bloom for 30 seconds. After blooming, pour hot water up to 225g, then steep for 1 minute 50 seconds. When steeping is complete, move the Clever Dripper to the container and open the valve to filter the coffee liquid from the dripper. The entire process takes about 15 seconds, with a total extraction time of 2 minutes 5 seconds.
The natural Red Cherry coffee brewed with the Clever Dripper has full-bodied berry acidity, gentle fruit fermentation aroma, honey-like sweetness, and rich black tea-like aftertaste.
V60 Dripper Brewing Steps:
Fold the filter paper and place it inside the dripper, then place it on the coffee pot. Use hot water to wet the filter paper while preheating the equipment. Then pour out the hot water from the pot and pour the ground coffee into the center of the dripper.
Use 30g of water to thoroughly wet the coffee grounds into a "hamburger" shape and bloom for 30 seconds, then proceed with the second pour. For the second pour, FrontStreet Coffee used steady medium-fine water flow in circular motion up to 125g, then stopped. When the water level dropped to 2/3 of the coffee grounds, the third pour was made. The third pour continued with medium-fine water flow in circular motion up to 225g and ended. Total extraction time was about 2 minutes.
The natural Red Cherry coffee brewed with the V60 has complex berry juice sweetness, light fruit fermentation aroma, honey sweetness, and black tea-like aftertaste.
Conclusion
Based on comparative brewing, FrontStreet Coffee found that coffee brewed with the Clever Dripper tends to be fuller overall than that brewed with the V60 dripper, and the aroma also lingers longer in the mouth. If you prefer full-bodied coffee texture, we recommend using the Clever Dripper. If you prefer coffee with rich complexity, we recommend brewing with the V60 dripper.
