Farm Introduction
Finca El Injerto is located in the famous Huehuetenango highland region of Guatemala. The Aguirre family has been growing coffee since 1900. The farm's name "Injerto" is taken from a local fruit name. El Injerto places special emphasis on ecological protection and organic cultivation techniques, implementing strict quality control to ensure the quality of green coffee beans. Through the efforts of the Aguirre family, El Injerto has also earned Rainforest Alliance certification, and since 2002, it has been a frequent winner in many international coffee competitions.
El Injerto Farm (also translated as Grafting Farm) is one of the top farms in Guatemala. If it claims to be second, probably no one would dare to claim first! It has won many world-class competition awards, leading to today's achievements. Last year, the farm owner further elevated their farm's status. Like the renowned Esmeralda Estate in Panama, El Injerto Farm holds global bidding activities. Of course, the bidding beans they offer are all exceptionally impressive. Notably, the first batch of "Mocha Variety" in 2012 set a world record, being sold at the astronomical price of "$500.5/pound USD," becoming a truly deserving star farm!
For this bidding, El Injerto Farm specially launched the "BEST El Injerto" series, selecting small batches of excellent quality and coffee varieties from within the farm. Experienced farmers carefully select ripe coffee fruits, and then cuppers eliminate batches that do not meet quality standards. Under such strict screening criteria, the Pacamara variety at El Injerto Farm accounts for only about 8% of the total production.
About the Pacamara Variety
Pacamara gained worldwide fame in the 2004 Cup of Excellence (COE), frequently winning championships within 2-3 years. Pacamara produced by Guatemala's El Injerto Farm set a record price of $80.2 per pound for green beans in 2008. The origin of the variety and its name: it is a variety derived from the elephant bean Maragogype and Pacas, taking the first 4 letters of Maragogype and Pacas to form Pacamara. It is an excellent coffee variety developed in El Salvador. The coffee beans are very large, similar to elephant beans, about 21-22 screen size. It has been an outstanding coffee variety in Central and South America in recent years. Every country or farm hopes to find suitable areas to grow this variety to produce excellent coffee, like Panama's Geisha. The characteristics of Pacamara coffee include bright fruit acidity and very pure, delicate sweetness. Although the appearance of Pacamara is still quite similar to its cousin - the elephant bean variety. Since 2006, COE has cupped Pacamara from 30 farms, some with flavors that are truly superstars, such as the 2006 Honduras champion Santa Martha, the 2007 El Salvador third-place Cerro Negro (Black Mountain Farm), Guatemala's regular COE champion farm El Injerto, and the 2008 El Salvador runner-up Pacamaral farm. All of these are outstanding representatives of Pacamara, but they are all award-winning batches, so prices are very expensive.
The Pacamara plant is medium to tall in height, with short internodal spacing, large, wavy, dark green leaves, and new leaves that are green or brown in color. The trunk is hard and thick, with wide, strong branches.
It has more lateral branches than Typica, similar to Pacas.
The cherries have a small protrusion at the flower disc position.
The coffee beans are large, oval-shaped, about 1.03 cm in length, 0.71 cm in width, and 0.37 cm in thickness.
Depending on altitude, Pacamara beans are about 70% the size of Maragogype beans.
Overall, almost all Pacamara beans are above screen size 17, with over 90% being screen size 18 or above.
Pacamara has full-bodied, rich, and complex flavors. Few coffee varieties have both fruit acidity and noticeable sweetness, with diverse flavors including stone fruits, vanilla plants, tropical fruits, chocolate, and sweet spices.

Brewing Method
Pour-over El Injerto. 15g of grounds, medium grind (small Fuji ghost tooth grinder 4), V60 dripper, 88-89°C water temperature. First pour 30g of water, let it bloom for 27 seconds. Pour to 105g and stop. Wait until the water level in the coffee bed drops to half, then continue pouring slowly until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.
