Introduction to Papua New Guinea Coffee

In recent years, Papua New Guinea coffee has begun to represent Oceania in the world of specialty coffee with its unique high-quality washed Arabica beans. Papua New Guinea coffee features full-bodied beans, moderate acidity, and a mellow, aromatic flavor profile.

Papua New Guinea is an island nation in Oceania, where "Papua" means "curly hair" in Malay. It is said that in 1545, explorer Retes reached the island and noticed that most of the islanders had curly hair, thus calling it "the island of curly-haired people," and the name has been passed down ever since. Located east of Indonesia, Papua New Guinea has a typical island climate, situated between the equator and 10 degrees south latitude, with tropical rainforest, volcanic rock, and plateau terrain. With elevations ranging from 1,200 to 2,500 meters, it is a paradise for coffee cultivation.

Coffee Production and Characteristics

Local production is not extensive, with about 85% of total coffee production coming from smallholder garden cultivation systems. Small farmers join local cooperatives to share processing equipment. Coffee is the second most exported agricultural product in Papua New Guinea, demonstrating the importance of the coffee industry to the country's economy. Due to different coffee varieties than Indonesia, higher elevations than Sumatra, and the use of washed processing, PNG coffee's regional flavor characteristics differ greatly from Indonesia's earthy, low-toned flavors, instead offering bright, sweet and sour notes with floral and fruit aromas, similar to South American flavors.

Papua New Guinea boasts a pristine, natural environment with vast, fertile lands. Its unique volcanic soil and abundant rainfall create excellent natural conditions for coffee growth. Papua New Guinea's premium coffee beans are as beautiful and precious as the country's national bird, the bird of paradise.

Kimel Estate

Large plantations typically have their own washing stations, while smaller individual coffee farmers have greater control over output quality and flavor expression. Located in the Western Highlands' Waghi Valley near the Kimel River Valley, Kimel Estate, like many large farms/plantations, has its own dedicated washing station. However, it is actually owned collectively by many independent small coffee farmers from the surrounding Opais people, making it essentially a private cooperative in some sense. Due to excellent growing conditions and stable quality control processes at the washing station, the resulting coffee exhibits lively brightness while preserving the unique flavor characteristics of Papua New Guinea coffee.

Another special feature is the diversity of coffee varieties grown at Kimel—so many that they cannot be counted on one hand: Typica, Arusha, Blue Mountain, Mundo Novo, Catimor, Caturra, and even more. In fact, just as one doesn't put all eggs in one basket, most farmers plant different varieties to avoid the risk of poor growth or production below expectations for any specific variety, which also creates interesting expressions of coffee flavor characteristics.

This peaberry from Kimel Estate offers slight spicy notes on the palate, followed by sweet, refreshing nut and sugarcane flavors with a creamy, smooth texture. The peaberry's mouthfeel is more solid, with overall balanced and smooth performance. Rich in flavor with pleasant aroma, it lacks herbaceous or earthy notes, with a texture as rich and mellow as a Van Gogh painting.

About Peaberry Coffee

Now let me introduce PB, the full name Peaberry, which we often call round beans. Typically, a coffee cherry contains two seeds—these are the common coffee beans we know, with one curved side and one flat side, similar to peanut shape, which we call flat beans. Peaberries, however, occur when a coffee cherry contains only one coffee bean, with an oval shape. They account for a very small proportion of the entire tree's fruit. Peaberries are all selected by hand, one by one, ensuring overall quality, so it's no surprise they taste good.

Papua New Guinea's coffee production is not very high, and all its coffee beans are carefully processed washed Arabica. Generally, washed coffee beans are full of bright fruit aroma but without strong acidity. They are characterized by a silky smooth mouthfeel and wonderful aroma, with moderate acidity—making them a rare coffee variety that combines high body with medium acidity.

Brewing Instructions

Pour-over Papua New Guinea: 15g coffee, medium grind (using Fujiyama grinder #4), V60 dripper, water temperature 88-89°C. First pour 30g water, let bloom for 27 seconds. Pour to 105g and stop. Wait until the water level drops halfway, then continue pouring slowly until reaching 225g. Avoid the tail section. Water-to-coffee ratio 1:15, extraction time 2:00.
